Looking for low-carb goodies
Bad news, I'm a diabetic and on a low-carb diet. Good news, I've lost 60 pounds! I've been looking for some low-carb recipes for christmas food and sweets. Thought I'd ask if anyone here has any suggestions for goodies that won't make my blood sugar skyrocket. LOL:snowball:

I don't have any low carb recipies but I do use splenda in alot of my cookies and cakes at christmas time because both my mom and aunt are diabetic.

I am diabetic and there is no way around it you just have to plan ahead for the carbs and portion control.

I think the best thing to do is just eat off the fruit tray with light yogurt or light cool whip for dip.

I make sugar free apple crisp using brown sugar splenda in the topping.

Ambrosia with canned fruit packed in water, sugar free pudding, light cool whip and very few nuts because of the fat and calories in them. I never use coconut, it has a lot of natural sugar.

I make my own lemon meringue pie with a very thin crust and sugar free lemon pudding. The same with cream pies.

Strawberry shortcake using angel food cake for the cake part, splenda and light cool whip.

I never eat those sugar free chocolates, if I eat too many it works better than activia on me. I did try to make sugar free fudge one year, it was just awful.

Thanks for all the replies and the suggestions. I've been examining our usual thanksgiving dinner and I'm gobsmacked at the level of carbs! 150 - 180 grams in one sitting!

No wonder people zonk out after thanksgiving dinner! hehe
