Every year I make a cheese cake that the family actually fights over to get a piece of. This year I am going to make 4 of them, as last years 3 did not quite make the rounds.
Best Ever Cheesecake
very rich baked cheese cake
(expensive to make, but very good)
1 cup graham cracker crumbs
1/4 cup sugar
1/4 cup butter
5 -8oz (250 g) boxes of cream cheese (Philly gives the nicest flavour)(softened)
1 cup sugar
1/2 cup flour
1 cup vanilla pudding and pie filling, (cooked and cooled to room temperature)
1 TBS vanilla
combine crumbs,sugar and melted butter.
press into bottom of 12 inch spring form pan
bake 325' for 10 min
Remove from oven and increase oven temperature to 450'
combine cheese,sugar and flour at med speed on mixer untill well mixed
add eggs one at a time beating well after each one. after 4th egg, beat mixture on high for 5 min.
with wooden spoon, blend in pudding and vanilla.
pour over crust
bake in 450' oven for 10 min. Reduce oven temperature to 250' and continue baking for 1 hour (maybe a bit longer if needed) untill firm.(don't over bake or it becomes dry and cumbly) It will crack, but don't worry about it
leave in pan untill cool (important or it spreads out and you end up with a pancake)
remove from pan and chill several hours or better yet over night before serving
top with your favorite topping...cherry, blueberry, strawberry...or what every you like. (we put the flavours beside the cake and everyone takes what they like best)
