Christmas Turtle Candies
¼ lb. pecan halves
24 individually wrapped caramels, unwrapped
1 tsp. shortening
1 C. semisweet chocolate chips
Preheat oven to 300º. Cover cookie sheets with aluminum foil, shiny side exposed. Lightly grease foil w/ vegetable spray. Place 3 pecan halves in a Y shape on the foil. Place 1 caramel candy in the center of each Y. Bake just until caramel is melted, about
9-10 minutes. Heat shortening & choc. chips over low heat just until choc. is melted. Spread over candies & refrigerate 30 minutes.
Peanut Brittle – Mom & Dad
1 ½ C. white sugar
1 C. white karo
Cook until it starts to bubble
2 C. raw peanuts &
1 tsp. salt
Boil until it’s a light amber color (Boil pretty hot – Mom sets her stove on about 8 for about 7-8 minutes – my stove on 6 – 6 ½ & boil about 7 minutes)
Take off burner & add:
2 tsp. baking soda
Stir until it bubbles & soda mixes in (Mom said maybe about ½ minute – if that) Pour onto a greased cookie sheet, or buttered Reynolds wrap. Mom said it works better to have 2 people to pour b/c you have to do it so fast, or it won’t be as light – one to hold the pan & one to scrape it out.
1 C. sugar
1 C. dark Karo
1 tsp. cane molasses (opt.)
1 T. vinegar
1 T. soda
Cook 1st 4 ingredients in large heavy pan, at med. Heat. Stir constantly. Cook to hard crack (300º). Remove from heat. Add soda & mix well. Pour on buttered jelly roll pan. Cook & crack gently. Dip in melted chocolate – 1 C. choc. chips & 2 large bars melted
Creamy Mocha Fudge
2 cups (12-ounce package) HERSHEY'S Semi-Sweet Chocolate Chips
1 cup HERSHEY'S Milk Chocolate Chips
2 tablespoons milk
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
4 teaspoons powdered instant coffee dissolved in 1 tablespoon warm water OR 1 tablespoon
1 teaspoon vanilla extract
1 cup chopped nuts
Line 8- or 9-inch square pan with foil.
Combine semi-sweet chocolate chips, milk chocolate chips, milk, sweetened condensed milk, coffee mixture and vanilla in heavy saucepan. Cook over low heat, stirring constantly, until chips are melted.
Remove from heat; stir in nuts.
Spread evenly into prepared pan. Refrigerate 3 hours or until firm.
Remove from pan; place on cutting board. Peel off foil; cut into squares. Store covered in refrigerator.
NOTE: For best results, do not double this recipe.
Chow Mein Noodle Candy
1 pkg. chocolate chips (12 oz. – 2 C.)
1 pkg. butterscotch chips (12 oz.)
1 C. canned planters peanuts (6 ½ oz.)
1 C. chow mein noodles
Melt chips in double broiler (or micro). When melted add peanuts & noodles. Stir. Drop by spoonful onto wax paper.
Oreo Cookie Truffles
1 (16 ounce) pkg.OREO Cookies, crushed
1 (8 ounce) Cream Cheese, softened
16 oz. Melted white chocolate
Crush cookies to fine crumbs in food processor;.(Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into balls, about 1-inch in diameter.
Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.)
Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.
Peanut Butter Cups
1 C. Peanut Butter
¼ C. Margarine
2 C. Powdered Sugar
Mix peanut butter, butter, & sugar until well blended. Shape into 3 rolls (I shape it into a lot of small rolls-it’s easier I think), & wrap in waxed paper. Put in freezer for 30 minutes. Put a drop of chocolate in the bottom of a small paper cup. Cut the rolls into slices, put peanut butter in the drop of chocolate & cover peanut butter with chocolate.
The recipe calls for chocolate to be 1 (12 oz.) milk choc. Chips & 3 T. shortening
If you can find Country Kitchen Cocoa Lite, you don’t need the shortening. I cut back on the powdered sugar. I also double the batch & It takes 5 bags of choc. Chips.
If using a double boiler to melt the chocolate, use very hot water, not boiling
Christmas Cut-Out Cookies
1 C. Shortening (Jean uses ½ C. margarine & ½ C. Crisco)
2 C. Sugar
1 C. Sour milk (1 C. milk minus 1 tsp. + 1 tsp. vinegar)
1 tsp. Baking Soda
4 tsp. Baking Powder
Pinch of salt
½ tsp. almond extract
5 C. flour
Works best if it is set in the fridge overnight. Roll ¼” thick & cut out. Bake 7-9 min. @ 350º.
