light Gingerbread Cookies

I was given this recipe from my aunt this past Christmas and it's really good, plus there aren't very many ingredients.

Gingerbread Cookies


1 (510 g) spice cake mix
1 cup flour
2 eggs
⅔ cup vegetable oil
⅔ cup molasses
1 tsp ginger

1.Blend all ingredients together, separate into 2 discs, wrp and put in fridge 2 hours – overnight.

2.Roll out dough and cut into shapes. Place on a greased baking sheet & decorate with sprinkles.

3.Bake 10 - 12 minutes* or until edges are lightly browned.

Makes about 5 dozen (2”) cookies or 3 dozen (3”) cookies

PS - If you prefer to do icing decorations instead, you could decorate them after they are baked, but my family's not big on icing, so we use big sprinkles for eyes and nose and then draw on a mouth with edible marker.
