For me the scent of cinnamon brings a rush of Christmas to my senses. The cinnamon infused pine cones were always the first Christmas related item to be shipped to the store in July, and since then I see Christmas whenever I smell it.

Drinking hot cocoa.
The smell of Cherry Chapstick.
The smell of sage and celery: Growing up I would wake up on Thanksgiving and Christmas mornings to my mom making stuffing with celery, onion and sage.
Scotch Tape - from all the tape that was used to wrap the gifts.
