eggless sponge

preperation time: 10 mins
cooking time: 15 mins

Eggless recipes were very much in demand during the war years. Although this is not a true sponge the flavour is very acceptable.

3 oz (85g) margarine

4 oz (110 g ) sugar

1 tablespoon golden syrup

6 oz (175 g) self raising flour sifted with

1 teaspoon baking powder or plain flour sifted with 2 1/2 teaspoons baking powder

1 1/4 pint (150 ml) milk and water

Preheat oven to 190 c (Ģ75 f) Gas mark 5. Line a swiss roll tin about 12 x 8-9 inches (30.5 x 20-23 cm) with well greased margarine paper or greaseproof paper.
Cream the margarine, sugar and syrup until soft and light. Fold in the sifted flour and baking powder with the milk, giving a smooth mixture.
Spoon into the tin and bake for 15 minutes or until firm to the touch.

Sounds good. But what is "golden syrup"? Is it what we call pancake syrup?

Thanks for sharing, I always make homemade cakes and I'll add this to my collection.
