"Santa's Surprise Cookies"

Okay - I've done and found the best cookie recipe EVER! I was recently re-reading some old Christmas edition magazines and came across this recipe. I don't know why I didn't notice it before when I first got the magazine - it sounds amazing. It really is quite simple actually:

Peanut butter cookies with a miniature snickers inside!

So I finally got around to baking the cookies tonight and I just had one. They are sooooo good!! I've been trying to find an awesome new cookie recipe. When I first took the oreo truffle balls to a church Christmas celebration, people loved them and were coming by the droves to ask for the recipe. Now those are old and I am missing the attention that they brought me! These are definitely the answer!

Recipe:
1 c. butter
1 c. creamy peanut butter
1 c. sugar
1 c. brown sugar
2 eggs
1 teaspoon vanilla
3.5 c. flour, sifted
1 tsp. baking soda
.5 tsp. salt
confectioner's sugar (optional)
1 bag Dove Brand miniatures milk chocolate
1 bag Snickers minis

-Beat together butter, peanut butter, sugar and brown sugar
-Slowly add the eggs and vanilla, beating until well mixed. Then mix in flour, baking soda and salt
-Cover and chill dough in the refrigerator for 2-3 hours
-Preheat oven to 325 (F)
-Section dough into 1 tablespoon portions and flatten each piece
-Place 1 snickers mini in the center of each dough piece
-Form dough into a ball around the snickers
-Bake for 10-12 minutes
-Remove from oven and sprinkle with confectioner's sugar.
-Melt the Dove chocolate pieces in the microwave and then drizzle the melted chocolate over the tops of the cookies.

Guys - these are to die for! So yummy!!! I definitely recommend them.

After thinking about them a bit more, I would say the cookie itself is a little dry, so I would recommend maybe cutting a little of the flour out. Perhaps maybe try just 3 and 1/4 cups first?
