First pumpkin pie of the season

My wife spoils me so. Today she literally ripped a pumpkin off the vine (?), took it home, cooked it, shredded it and made our first pumpkin pie of the season.

She is a purist in the kitchen, always doing her own pie crusts and such but she has always done pumpkin pie from a can, never fresh. She wanted to "do it right".

So now we have several pumpkins in our kitchen never to see Halloween as they will all be "tested" over the next couple of days to see which kind makes the best pie.

Lucky me!

DH makes "real" pumpkin pies and puts in just a little canned pumpkin with it. His mom gets the pumpkins and fixes them for him. He just has to take the zip bags out of the freezer and make the pies. We don't do homemade crusts, but he refuses to use a deep dish crust. I don't know what difference it would make, but I don't cook either!

He makes pumpkin pies for his family for Thanksgiving. We gather with them for Thanksgiving breakfast, but still have pie for dessert! He has already had a request from our 13 year old nephew to not forget the pumpkin pie! We have taken them to my family, but my grandmother makes an awesome pumpkin roll, so we're usually eating that up on Thanksgiving night.

I've always wanted to try making my own pumpkin pie filling ... maybe I will try this year! I always make my own crust, but don't know if I'm brave enough for the filling, lol. I use the plain canned stuff and add my own spices

I had some more this morning and I have to tell you -- there is a difference! And it is incredible. It is slightly lighter in color but much more explosive in flavor...VERY good. Sandy says it was worth the extra effort.
