Easy Pumpkin Pudding

Easy Pumpkin Pudding
1 package of instant vanilla pudding mix
1 12 ounce can of evaporated milk
1/4 cup of 1% milk
1 cup of pumpkin puree
1 teaspoon of pumpkin pie spice
1/2 teaspoon vanilla

Empty pudding mix into a mixing bowl. Add the can of evaporated milk and 1/4 cup of of 1% milk. Mix together thoroughly. Stir in pumpkin puree. Once it is all mixed together, stir in the pumpkin pie spice and vanilla. Let it sit in the fridge for 15 minutes, then eat and enjoy!

I made this recipe last night. It is a really easy way to get the flavor of pumpkin pie without all the work. I wanted to try to get it thicker than normal pudding, so I used the evaporated milk. You can use all 1% milk if you don't have evaporated milk. For a healthier version, use a sugar free pudding mix and 2 cups of 1% milk.

Sounds great!!!!!! I have never seen the pumpkin pudding in the stores here. I will have to look the next time I go.

But that takes the fun out of it If I wanted to, I could get frozen meals and go out to eat for every meal, but some days, I like cooking something myself.

Hello! I'm going to make this in a bit but I have a question. Is it the little box of pudding mix or the bigger box? I didn't know so I bought one of each just in case. Thanks!!

Whoops, I just made it with the big box. Haha. It looks okay though. Thicker than regular pudding but it has a nice flavor taste to it.

That's okay! I spooned it into a graham cracker crust and let it set up. My family absolutely adored it! So Thank you for posting the recipe.
