light Crock Pot Breakfast

Last year I pre-made breakfast on Christmas Eve, refrigerated overnight and popped it in the oven in the morning while we were opening presents. This year I'd like to just put something in the crock pot and let it cook overnight. Does anyone have any good crock pot breakfast recipes?

I am going to pre make homemade cinnamon rolls on christmas eve and then just take them out and let them rise christmas morning and then bake them. I have never made any breakfast items in the crockpot but I may have to look for ideas.

This is delish recipe, my aunt makes. C.A.



Christmas Crockpot Omelette Casserole

(Serves 10)
12 eggs
1 32 oz bag of frozen hashbrown potatoes -- partially thawed
1 lb of cooked & drained, thin crispy bacon cut into small pieces
1/2 cup minced onion
3/4 lb of shredded sharp cheddar cheese
1 cup milk
1/2 tsp dry mustard
salt and pepper to taste

Layer your ingredients beginning with potatoes on bottom layer, then bacon ,etc.....

1. potatoes
2. bacon
3. onions
4. cheese
5. potatoes
6. bacon
7. onions
8. cheese

Now, beat the eggs, milk, mustard, salt and pepper together. Pour this over the whole mixture. Cook on low for 4 hours.

For the first time my DH and I will not have our kids here for Christmas morning. My DD has invited us to her home to watch our grandkids unwrap gifts. I will be taking breakfast with me and this looks perfect. Thank you for posting it.
