I'm not a chocolate maker so can't really help you. However, I did see a recipe in a past family fun magazine for a chocolate bark that looked yummy. It had regular chocolate and white chocolate swirled together, with pistachios. Oh, and they also had a recipe for chocolate truffles that looked yummy. Maybe do a search on www.familyfun.com to look for possible recipes.

TIPS

1) When the recipies call for chocolate for dipping I use the 24oz packages of chocolate coating.

2) To melt chocolate I use a double broiler if I am going to be dipping things into it. To melt chocolate using a microwave I put it in a glass bowl and then put the microwave on 50 percent power and stir after every thirty seconds until melted.

3) When dipping pretzel sticks into chocolate you can not roll in sprinkles afterwards. Instead put down wax paper and put sprinkles over the area you will lay the pretzels down. That way when you lay them on the wax paper there will be sprinkles on the back side and you can put more sprinkles on the top side.

4) I always keep some crushed up pretzels and candy canes on hand when I am dipping things in chocolate. If there is any chocolate leftover after dipping you can mix in the pretzels or candy canes and then pour out onto a piece of wax paper to make bark.

5) The day after halloween and easter is a great time to get chocolate. I buy anything that is solid chocolate and I melt it down and use it for dipping or to make chocolate bark. When you melt it just add a tablespoon of shortening.

These are the recipes that I make every year to give out to my neighors and my mom gives them to her coworkers. Everybody has always loved them. This year I am going to try making a chocolate fudge, freezeing it, and then dipping it in white chocolate. I also make alot of just plain molded chocolates. I just melt the chocolate and then pour it into the molds and freeze it until it hardens. I am also thinking about buying a chocolate melter this year. It is like a small crock pot but it doesn't get as hot so it won't burn the chocolate. Hope you have fun making whatever you decide to make!!!!
