when do you start to make cookies?

I think I will start tomorrow.. my first cookies are christsollen cookies (Christmascake in small cookie size pieces)

I don't plan out my baking, I just do it when I get the urge... or a craving. I usually don't do it anymore than a week or so before Christmas though. We don't need an abundance of sweets around the house, even as delicious as they are.

Sabine,

How interesting that you make Christmas cake cookies. I wrote a cookie and muffin cookbook back in the day and one of my recipes is for Christmas cake cookies.

I LOVE Christmas cake but none of the rest of my family cares for it much so it doesn't make sense to make a huge batch of it. So I took my Christmas cake recipe and adapted it to make cookies...and it works...the cookies are awesome! I love them as I get to have Christmas cake without having a huge supply!

I love Christmas Cake too. But my Family likes only the smal Cookie Version. And unfortunately without raisins.
We love to give to our Friends and workmates, small Bags with different Christmas Cookies as a Christmas Gift. And the Christmas Cake Cookies are a part of them.

I usually begin the first week of December.
I make about 7 kinds.
My neighbor makes about 30 different varieties and she begins in August and freezes them.
It works out fine and they still taste good.
The only ones she makes in December are her cut outs.

I sometimes will make a batch or two during the summer if Im trying a new recipe to make sure it turns out the way I want. I usually start right after Thanksgiving..sometimes right before . I have never tried making cookies and freezing them.. may try that though. I love to bake although I usually only make 3 or 4 different kind of cookies... having 2 small Sons ( 4 and soon to be 2 year old) I dont have as much time as I would like to bake at the Holidays... as they get older I am planning on making and trying out some new recipes!

Christmas Cake is a Fruit Cake. Here in Germany we call it Christstollen or Weihnachtsstollen.
