My sister sent me the recipe for these delicious cookies she made the other week, so these are on my list of things to bake:

Pumpkin Cookies

1 cup brown sugar

1 cup sugar

3/4 cup shortening (I use butter Crisco)

2 eggs

4 tsp. pumpkin pie spice

2 cups pumpkin

Cream together sugars and shortening, add eggs, spice and pumpkin.

Sift together:

3 1/2 cups flour

2 tsp.baking soda

1 Tbs. baking powder

Pinch of salt

Combine dry ingredients w/ wet

Bake at 350 for 10 minutes



Cream cheese frosting

6oz. Cream cheese (room temp)

1/2 cup butter (room temp)

4 to 4 1/2 cups powdered sugar

1 tsp. vanilla

Mix together cream cheese and butter, gradually add powdered sugar

And vanilla until desired consistency

Enjoy!!
