star Appetizer - Sausage-Stuffed Mushrooms

Sausage-Stuffed Mushrooms

Ingredients

12 to 15 large fresh mushrooms (I like the Bella Mushrooms)
1stick of butter
1 small onion finely chopped
1/4 teaspoon dried basil
Salt and pepper to taste
1 lbs Italian sausage (if you only have links squeeze out the filling)
1/2 tablespoon parsley
6 to 8 slices of bread (stale or fresh whichever you like – I like toasting mine)
Grated Parmesan cheese to taste for me it would be two heaping tbsp
Cooking spray

Directions

Clean mushrooms and remove stems. Take the stems & onion chop finely and mix together; set aside.
In a large skillet take a little butter and coat pan cook your sausage.
In another large skillet, heat butter. Cook stems and onion mixture until tender (or they start to turn clear to slightly brown). Take off heat and add the basil, salt and pepper.
Rip bread / toast up and mix into the mushroom / onion / butter mixture.
In a large bowl, combine the bread mixture, sausage, cheese, and parsley; stuff mushroom caps. Place in a baking pan (spray pan with cooking spray). Also, once you place each mushroom in baking pan spray a little cooking spray on top of each one.
Bake at 400° for 10 - 20 minutes or until.


This is so good, one of my favorites.
