Christmas in July is all about sharing and preparing. What better way to do that than with recipes?

We keep a little website we call MerryChristmasRecipes.com, which is a simple collection of festive recipes that come from the Christmas community. It's time to add new ones!

This activity is really simple: just respond to this post with your favorite Christmas recipes. For each recipe you submit your name gets into the draw for prizes set aside just for this event. The more you submit, the better your chances are to win.

Best of all, your recipe gets shared with the community here...and added forever to the database we're growing at MerryChristmasRecipes.com.

Squashberry Sauce Cake

INGREDIENTS

  • 1 1/4 cups (300ml) milk room temperature
  • 2 large eggs
  • 1 1/2 tsp salt
  • 3 tbsp granulated sugar
  • 2 tbsp butter unsalted at room temperature
  • 3 cups All purpose flour
  • 1 1/2 tsp bread machine yeast can use instant yeast as well



INSTRUCTIONS

  1. Measure cake ingredients into your bread machine's baking pan in the order listed. Select Dough cycle. Keep sauce aside.

  2. Spray bundt pan with cooking spray. With floured hands or a rubber spatula, remove dough from baking pan and pour into a prepared bundt pan. Cover and let rise in a warm, draft-free place for 45 to 60 minutes. Preheat oven to 350F (180C).

  3. Bake cake in preheated oven for 30-35 minutes. Tip the cake onto a large plate and leave upside down. Immediately with a long skewer poke numerous holes in the cake. This is where the sauce will soak into the cake, making it moist. Slowly spoon the sauce over the warm cake, letting it soak in. I used a pastry brush to make sure all the cake was covered. Let cake sit for two hours before serving.

My wife's aunt used to make this dressing every Thanksgiving. My wife has since assumed the responsibility and now makes it every Christmas too.

Aunt Manda's Dressing

INGREDIENTS:
3 packets Martha White cornbread mix
1 stick butter
4 celery stalks (chopped)
1 large white onion (chopped)
1 1/2 bunches green onion (chopped)
5 eggs (boiled and chopped)
1/4 tsp garlic powder
1 1/2 - 2 tsp poultry seasoning
1 tsp thyme
1 carton Chicken stock

DIRECTIONS:
1. Bake cornbread per package instructions. Crumble. Add salt and pepper.

2. Saute the celery, onion, and green onion in one stick of butter. Add salt and pepper.

3. Combine the sautéed veggies with the cornbread. Add the boiled eggs.

4. Add the garlic powder, poultry seasoning, and sage.

5. Add salt and pepper.

6. Add chicken stock to the mixture until it jiggles slightly in the pan.

7. Bake @ 350 degrees for 45 minutes.

I make this at Thanksgiving and Christmas. It can be a side dish or a dessert. If you decide to go the dessert route you may want to add a little homemade whipped cream or Chantilly cream.

Baked Pineapple
Ingredients
1/2 cup of butter
1 cup of sugar (white)
4 eggs
1 can of crushed pineapple drained (1 lb 4 oz)
5 slices of white bread cubed

Pre heat oven to 350 degrees - grease a 1 1/2 quart casserole dish. -Cream butter and sugar - beat in eggs one at a time - stir in pineapple - fold in bread cubes. Pour into the greased casserole dish and bake for one hour. Now a hint this can burn quickly start checking this around the 45 minute mark.

My Grandmother used to make homemade applesauce for every holiday. Of course she did not write down the recipe. This is as close as I can get to hers.

Homemade applesauce

3 granny smith apples - peeled cored and cubed
3/4 cup of apple cider (non alcoholic)
2 tablespoons of honey
cinnamon (to taste)

Place the apples, cider and honey in a medium sauce pan - Bring to a boil - reduce heat, cover and let simmer for 10 minutes. Remove cover and mash apples. Simmer uncovered for another 10 minutes or until the water has cooked off. Stir in Cinnamon.

Kim’s Apple Cake

2 Cups Flour
½ cup white sugar
½ cup brown sugar
½ t. salt
2 t. cinnamon
½ t. cloves
½ t. nutmeg
2 t. baking soda
1 cup raisins
1 cup chopped walnuts
½ cup melted butter
2 large granny smith apples (peeled and sliced)
2 cups apple sauce (no sugar added…just apples)
1 t. baking powder
2 eggs



Put all dry ingredients in bowl. Add raisins, walnuts, melted butter and applesauce. Beat until blended. Pour batter into greased and floured round cake pan (I use a 9 inch). Bake at 350 for 50 minutes

After it is cooled frost with cream cheese frosting.

Kim’s Cream Cheese Frosting
Zest of two oranges – reserve and sprinkle on top of frosted cake
One 8 ounce package cream cheese
½ cup softened butter
3 cups powered sugar
1 teaspoon vanilla
1 Tablespoon heavy cream

Mix it all up.

Kahlua Cake – Easy Way

Box of Ghirardelli dark chocolate cake mix
Small box of Ghirardelli instant chocolate pudding mix
16 ounces full fat sour cream or full fat Greek yogurt
3 large eggs
1/3 cup oil (I’ve used coconut, avocado, or canola)
½ cup Kahlua
2.5 cups dark chocolate chips (I’ve used bittersweet or semi-sweet chips)

Put all ingredients in large bowl and mix
Pour into prepared bundt cake pan

Bake at 350 for one hour
Let cool 10 minutes, then remove from pan.

Refrigerate overnight then frost with ganache


Ganache

I make it in the morning and let it cool for about an hour before frosting cake

1 stick butter
1 cup heavy cream
16 ounces bittersweet chocolate (I use Ghirardelli)
1 Tablespoon Kahlua

Heat butter and cream on burner at low heat until the butter is melted and it starts to bubble. Take off heat.

Add bittersweet chocolate and Kahlua and stir until chocolate is melted. Set aside for about an hour. Then frost the cake and put it back in the refrigerator until an hour before serving.

Lemon Cake

Preheat oven to 350. Grease and flour bundt pan

Mix following:
2.5 cups flour
1 t baking powder
½ t salt

Mix following:
2 sticks softened butter
1 cup sugar
2 t vanilla
3 eggs
3 T grated lemon peel
8 ounces white chocolate, melted

Alternate mixing the dry ingredients and 1.5 cups buttermilk into the wet ingredients.

Bake for 55 minutes.

Cool in pan for about 10-15 minutes

Combine 1.5 cups powered sugar with 5 Tablespoons fresh lemon juice.

Poke holes (I use a nut pick) into the cake and pour half of the powered sugar/lemon juice into the holes. Let stand for 10 minutes.

Invert onto plant and make holes in the top of the cake. Drizzle the remaining powered sugar/lemon juice into holes.

Cover and refrigerate. Take out an hour before serving.

Crab cakes - This is my Mama's recipe. I am from Maryland and we used fresh lump or some people call it back fin crab meat. This recipe uses the meat from blue crabs.
1 pound of crabmeat
1 teaspoon of Old Bay Seasoning
14 teaspoon of salt
1 tablespoon of mayonnaise
1 tablespoon of Worcestershire sauce
1 tablespoon of chopped fresh parsley
1 tablespoon baking powder
1 beaten egg
2 slices of bread (white bread, crust removed) broken into very small pieces.
a little milk

Barely moisten the bread with milk. You don't want it too soggy. Mix all of the ingredients, Shape into cakes. Fry in oil just until sides are brown.

Bourbon meatballs My sister makes this every year for her holiday party.
1 pound of meatballs
1/2 cup of brown sugar
3/4 cup of bourbon
1/2 cup of ketchup
1 teaspoon grated onion

Combine all of the ingredients in a medium sauce pan. Simmer on low heat for an hour.

Banana Split Cake

* make 24 hours before serving

2 cups graham cracker crumbs
3 sticks butter or margarine
3-4 bananas
3 cups powdered sugar
3 eggs
1 can crushed pineapple
1 cup crushed walnuts
1 large container dairy whipped topping (ie: Cool Whip)
¼ cup chopped walnuts
maraschino cherries

Combine graham cracker crumbs with one stick melted butter/margarine.
Press into a 9x11 pan.
Peel bananas and slice lengthwise.
Layer sliced bananas on top of graham cracker crust.
Refrigerate
In a bowl combine : powdered sugar, eggs and remaining butter/margarine (2 sticks).
Beat at High for 15 minutes (not one minute less). This will make a custard cream like filling.
Spread this filling over the bananas/graham cracker crust.
Drain the crushed pineapple and sprinkle it on the filling.
Sprinkle with crushed walnuts.
Cover with the whipped topping.
Sprinkle the chopped walnuts on the whipped topping.
Decorate with cherries.

This is a favorite at parties. It does not last long.

Yuletide Drop Cookies

makes 5 dozen

1/2 cup butter
1 cup sugar
2 eggs
¼ cup sour cream
1-1/4 cup flour
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
¼ teaspoon cloves
1 cup Quaker oats
1 cup finely snipped dates
½ cup raisins
½ cup chopped candy cherries
halved candied cherries

Cream butter, sugar and eggs until fluffy.
Stir in sour cream.
Sift together flour, baking soda, cinnamon, salt and cloves.
Stir into creamed mixture.
Mix in oats, dates, raisins and chopped cherries.

Drop from teaspoon 2 inches apart onto a lightly greased cookie sheet.
Top each cookie with a halved cherry.

Bake at 350 for 10-12 minutes

Remove from cookie sheet and cool on wire rack.

This is an often requested recipe. Quick, easy and yummy.

Hamburger Stroganoff

serves 4-6

1 medium onion
1 pound ground beef
½ teaspoon instant minced garlic
2 teaspoons flour
1-1/2 teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
1 4-ounce can mushrooms, drained
1 (10-1/2 ounce) can condensed cream of chicken soup
1 8-ounce carton of sour cream

Add onions to ground beef and brown.
Stir in garlic, flour, salt, pepper, paprika and mushrooms.
Simmer for 5 minutes
Add soup and simmer uncovered for 10 minutes, stirring occasionally
Stir in sour cream

Serve on mashed potatoes, rice or noodles.

Fluffy Cornbread

makes 12 servings

1 cup half and half
1 cup butter
2 cups biscuit mix
1 cup yellow cornmeal
½ teaspoon baking soda
½ teaspoon salt
¾ cup sugar
2 eggs, slightly beaten

Scald half and half with butter.
Add to thoroughly mixed dry ingrediants.
Mix in eggs.
Pour into a greased and floured 13x9 inch pan.

Bake at 350 degrees for 30 minutes

Allow to stand for several minutes before cutting.

Meat Roll-Ups

makes 48 roll-ups

1 pound lean ground beef
1 envelope onion soup mix
1 cup grated cheddar cheese
3 8-ounce packages refrigerated crescent rolls

Combine beef and soup mix in a skillet and cook over medium-high heat until the meat is browned.
Drain off any excess fat.
Stir in cheese and set aside to cool.

Preheat oven to 375

Cut each crescent in half – making 16 triangles from each package
Place a heaping teaspoonful of meat mixture on each triangle and roll to enclose.
Place on an ungreased cookie sheet, tucking the point of the dough under the roll.

Bake 13-15 minutes.

Serve hot.

Party Sangria

This fruity-tasting, adults-only Party Sangria recipe for the classic Spanish wine cooler will turn any gathering into a fiesta! Mix it up from scratch with a few fresh-tasting ingredients and let the fun begin!

What You'll Need​

  • 1 (6-ounce) container frozen limeade concentrate, thawed
  • 1 (6-ounce) container frozen lemonade concentrate, thawed
  • 1 (6-ounce) container frozen cranberry juice cocktail concentrate, thawed
  • 4 cups Burgundy or other dry red wine
  • 2 cups cold water
  • 16 maraschino cherries
  • 1 lime, washed, cut into chunks
  • 1 orange, washed, cut into chunks
  • Ice cubes

What to Do​

  1. In a large pitcher, combine limeade, lemonade, and cranberry juice concentrates; add wine and water, and stir until well combined.
  2. Stir in remaining ingredients (see Notes) and serve immediately in wine or tall ice-filled glasses.
NOTE:

If you’re not serving this immediately, don’t add the cherries and the lime and orange chunks when you mix everything else in; stir those in just before serving.

This is another one of the recipes my sister makes for her holiday party

Hot Crab Dip

1 pound lump crab meat
2 (8 ounce) packages of cream cheese
1/2 cup sour cream
3 tablespoons of Mayonnaise
2 to 3 teaspoons of Worcestershire sauce
pinch of garlic sault
shredded cheddar cheese

Mix all of the ingredients together except the cheddar cheese. Pour into a baking dish. Top with shredded cheddar cheese. Bake at 350 degrees for 30 minutes. Serve with corn bugles or crackers.

Mama's bread dressing

For an 18 to 20 pound turkey

2 sticks of butter
fresh parsley
4 large onions - chopped
One bunch of celery chopped
1 and 1/2 loaves of bread - cube the bread the night before, cover loosley
6 eggs beaten
salt and pepper
poultry seasoning

divide the butter and veggies (including the parsley) into two skillets and cook until until tender.
Mix those ingredients with the bread cubes Add in the eggs, salt and pepper and poultry seasoning to taste,

Stuff the turkey - Pack the dressing loosely into the turkey and neck cavity.

Roast turkey according to directions that come with the turkey.

Hint when it comes to the parsley - my sister said the takes the leaves off of about 4 stalks and chops those up finely and to put that in with the veggies when you are cooking those.
