I've been away for a few weeks. We are having our house remodeled and have been staying with friends. We will certainly be glad when it is finished. Not sure we would do it again.
I'm now 3 months into retirement and so far I would highly recommend it.

I made a big pot of Ham & Veggie soup last week & yesterday I made a big pot of Amish Chicken Corn Soup (new recipes) ~ I love soups!!
This morning Mom woke up & the 1st this she told me is ... "I think I'm going to try to bake chicken pie today!" LOL! She must have been dreaming about it ~ mom hasn't cooked/baked for a couple years!!! Just made me chuckle!

Holiday, would you be interested in sharing those recipes, because both of them sound delicious!

bread is rising,, cookie squares are baking...only 10 more items to bake for the fair entities tomorrow. LittleCS is coming over to also bake as her kitchen is to small for such a major job.

Going to be a hot one again today, but thankful with all this baking that our AC is still on !

hope you all enjoy your day, if not busy I will have free samples available for tasting, stop in for a cuppa a tea and some goodies.

Merry Tuesday!
We’re expecting scattered showers and storms today, remnants of Florence. The winds are already picking up. I don’t have too much going on here. I might run to Rite Aid quick before the rain moves in but other than that I will just be working on some chores around the house. Dinner will be tacos and I think I’ll bake something for dessert since I’ll be home this afternoon. I guess that’s about it. I hope everyone is well and has a nice day!!!

Tonight I finally was able to go through some Fall clothing. I had to take back an outfit I bought for Carolina because she grew. Unfortunately the character on the shirt is quite popular so they didnt have anymore left. The shirt was Fancy Nancy, but I was able to get her a Trolls shirt instead so she was happy with that.
Hope Carolina is doing well!
My girls loved Fancy Nancy!
 
Merry Tuesday! We are expecting a rainy day today and my daughter is supposed to have a soccer game but I am thinking it may get canceled. Typical work day for me and I am making beef stew for dinner. Hope you all have a great day!

And today, we are even closer and will be on the lookout for our next Milestone marker!

Days to Christmas Day: 98

The next marker?
Well, you just might not believe it, but here goes:
It's the THREE-QUARTERS point to Christmas Day and it's only 7 days away.
ONE WEEK from today, we will enter the FINAL quarter of our Christmas Day count.
(Just let that soak in a bit before you panic!)

Well, yet another day of somewhat rainy and breezy conditions yesterday, but it was interspersed with some sun. (Yes. Actual SUN!)
Today and the rest of the week should be pretty nice, and we have started this day-before-'Pines Day with 73 sunny degrees here in hurricane-free central NC.

Good morning MMC!! Merry Tuesday!!

This is my last day of "normalcy" ~ I haven't said anything on here yet, but I'm starting a new job tomorrow! My boss will be 65 in October & he is selling a good portion of our equipment to one of our customers ~ they are taking all of our customers with it & I go along with the deal too. LOL!!! I'm nervous about it - a little excited too. It's a good company. Will add about 4 minutes to my already 4 minute drive to work. LOL!! I just have it made here, being so close to mom if she needs help. Having a tv in the office, an hour lunch, I can wear shorts in the summer....I'll see what this new job all entails! There are 2 other girls in the office over there & 3-4 guys. I know most of them & they are very nice! I will only be going over there 1 day a week until the end of the year when my current business closes & then I'll be there full time. Well - he told me I could pick my hours...if I wanted to work 20 - 30 or 40. So I'll feel it out when I get there! Gah!! I'll be going from 3 employees to 50+! Will be a change for sure!

Cement trucks are supposed to be at our house at 11 this morning so we should have a new driveway & sidewalk tonight. It looks like a huge driveway, compared to what we had! Who wants that bill??? HA!!

She really looked like a Superintendent watching from the front steps!
She's funny!! Those eyes are very inquisitive!! LOL!! Yesterday she wanted to go out & see what was going on SO bad, but they had poured cement in the garage, so she couldn't...this morning we put her out & she was a big scardy cat! She couldn't get in the back yard fast enough! Animals!! :p

You got it! Ham & Veggie is one of my all time faves!! It was my Dads specialty!


Ham and Vegetable Soup

TOTAL TIME: Prep: 15 min. Cook: 3 hours 10 min. YIELD:16 servings

2 pounds smoked ham hocks (I use shanks)
4 medium carrots, sliced
1 cup thinly sliced celery
1 medium onion, chopped
8 cups water (I substitute some of the water w/ 1 can of chicken broth)
2-1/2 cups diced unpeeled red potatoes
1 cup each frozen corn, peas and cut green beans
1 can (11-1/2 ounces) condensed bean and bacon soup, undiluted
1/4 teaspoon pepper

Directions
1. Place ham hocks, carrots, celery, onion and water in a Dutch oven or soup kettle; bring to a boil. Reduce heat; cover and simmer for 2-1/2 hours or until meat starts to all off the bones.

2. Add potatoes and vegetables; bring to a boil oil. Reduce heat; cover and simmer for 1 hour. Remove hocks; allow to cool. Remove meat from bones and cut into bite-size pieces; discard bones. Return meat to kettle. Stir in bean and bacon soup and pepper; heat through. Yield: 14-16 servings (4 quarts).


Amish Chicken Corn Soup
Creamed corn and butter make my chicken corn soup homey and rich. This recipe makes a big batch, but the soup freezes well for future meals—one reason why soups are my favorite thing to make. —Beverly Hoffman, Sandy Lake, Pennsylvania
Makes
12 servings (about 4 quarts)

1 medium onion, chopped
2 celery ribs, chopped
1 cup shredded carrots
2 pounds boneless skinless chicken breasts, cubed
(I used a little less)
3 chicken bouillon cubes
1 teaspoon salt
1/4 teaspoon pepper
12 cups water


2 cups uncooked egg noodles
2 cans (14-3/4 ounces each) cream-style corn
(I used 1 can cream style corn & I filled the can back up w/ corn that I par-boiled & cut off the cob)
1/4 cup butter

Directions
  • 1. Place first eight ingredients in a Dutch oven; bring slowly to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and vegetables are tender, about 30 minutes.
  • 2. Stir in noodles, corn and butter. Cook, uncovered, until noodles are tender, about 10 minutes, stirring occasionally.

She is doing well. Nervous for her staples to come out but I told her she'd be fine. Fancy Nancy is the best. She is learning all sorta of new words from the books. She has a tv show on Disney jr toys and chapter books now. Her birthday in October will be mainly Fancy Nancy gifts amd Christmas will be all about Barbie,
