Good Post-Milestone Morning, good Friends.

And any time we pass a Milestone the question naturally arises as to the next one.
Well, Folks. Hold on to your mistletoe (and your fingers too).
Our next marker, the FOURTH one on our list, is just 2 weeks from today.
And believe it or not, it's the ONE THIRD point to the Season.

And we have started March rather cold and cloudy here where we stand at 32 degrees.
Fortunately there is no rain predicted, and after a fairly chilly one today, we should get nice and warm for tomorrow with the high in the mid 60's.

Merry Morning! It is a beautiful ,bright, sunny morning here very fitting for the first day of March!! Hooray! The start of March makes me feel like a captain of a ship who has been sailing through treacherous waters and suddenly the sea is calm.

Realistically I know spring will not happen here for another few weeks for us (we may even get a cold snap/snow soon) but the days are longer and the sunlight seems somehow brighter.

I am working tomorrow so I am going to just take it easy today and catch up with family time.

I can't describe how excited I am for spring! Longer days, hopefully more sunshine and Easter. I love Easter!

Hope you all have some nice plans for the weekend. :] I am just gonna catch up with uni work I missed last week due assessments. I am also delivering a speech at Rotary Club on Wednesday so I hope to note down some ideas and make a draft for it.

Hope everyone is doing great! Holiday glad they caught the guy!!

I'm out of town again and have been for the past two and a half weeks. Heading back Monday evening and then don't have to go anywhere again till the first week of April. Best though is that I bought Bud's ticket home for the 15th. We're not telling anyone, not even our son. LOL It'll be a surprise for them!! ;-)

Last night Noah and I were watching Andy Griffith reruns on TVLand in the hotel. They had a Christmas episode. *headdesk* Got whompped by major PCBs except these were PRE not post. LOL. Too far.

I am heading out in a few minutes to go food shopping. I probably should have been there already, it's going to be crazy busy today. I still don't know how much snow we will be getting. I heard as little as 4 inches and then I heard up to a foot. So who knows, we'll see what happens. I'm really looking forward to the temperatures warming up a little bit. I had the dogs out back earlier and it is so darn cold!
Not too much else going on. Typical day of chores. I'm also going to visit my parents later this this afternoon for a little while. I hope everyone is well and has a happy Saturday!
 
Lots of errands to run this morning but I wanted to stop by and say that I hope everyone has a GREAT DAY!!!

Absolutely - this was on Facebook, but I tweaked it a little bit. This is how I made it, & I wouldn't change a thing!: :smile:

Mexican Stuffed Shells
1/2 pound ground beef (or ground turkey)
1 package low-sodium taco seasoning
8 ounces cream cheese
20 jumbo pasta shells
1 1/2 cups corn & black bean salsa
1 cup taco sauce
1 cup cheddar cheese
1 cup Monterrey jack cheese
For toppings:
3 green onions
Sour cream

Preheat oven to 350°.
In a pan brown the ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Stir together and mix well. Set aside and cool completely.
While ground beef is cooking, cook the pasta shells according to package directions; drain. Set shells out individually on cutting board or baking sheet so that they don’t stick together.
Pour corn black bean salsa on bottom of a 9×13 baking dish. Stuff each shell with 1-2 tablespoons of the meat mixture. Place shells in 9×13 pan open side up. Evenly cover shells with taco sauce. Cover dish with foil and bake for 30 minutes.
After 30 minutes, add shredded cheese and bake for 10-15 more minutes with the foil removed. Top with green onions or olives if desired. Serve with sour cream and/or more salsa!
Serves 20 shells
