Hey! Thanks for the tip! My hubby's uncle owns a business in Richmond. I should hitch a ride with him to work some day & spend a day at those shops. Sounds like an awesome day!!

Thanks xmas! The cookies were pretty darn tasty. I brought some in to work today! They really aren't as big of a pain as they sound ~ they cut out really nice & the chocolate glides right on ~ the worst part was the caramel, but it wasn't horrible either!

Twix Cookies


Shortbread Cookies
1½ cups butter, softened
1 cup powdered sugar
1 teaspoon vanilla
3 cups flour
¼ teaspoon salt

Caramel Layer
15 oz of caramel (I use Peter's caramel that comes in a 5 lb. block because I can simply just melt it down in the microwave as is and its ready to go, no evaporated milk required, but you can use Kraft caramels as well. Just follow package directions for melting)
2 Tablespoons evaporated milk

Chocolate layer
2 cups milk chocolate chips
2 teaspoons shortening




Instructions
1.Preheat oven to 350 degrees F.
2.In a large bowl, cream butter and sugar together. Add vanilla, flour and salt and mix until well combined.
3.Dump dough onto a lightly flour surface.
4.Roll dough out to ½ inch thick.
5.With a small biscuit cutter, cut out cookies and place on greased cookie sheet.
6.Bake at 350 degrees F 14-16 minutes.
7.Remove from oven and let cookies cool completely.
8.Melt caramel according to package directions. Spread over cooled cookies. Let caramel cool completely before spreading on the chocolate.
9.In a small microwave safe bowl, melt chocolate chips and shortening in 30 second increments, stirring in between each increment until melted and smooth. Spread over the tops of cooled caramel.
10.Let chocolate set before eating and serving. I popped mine in the fridge/freezer to get the chocolate to set faster.

Just got some terrible news ~ our friend & mechanic at the marina ~ his oldest son was killed in a car crash last night! UGH!!! Don't know any details other than that! I'm so sad for them!!! Our friend is divorced & he has 1 other younger son. Please keep them in your prayers.

That is terrible, they will be in my thoughts.
 
We've had some nasty storms here today. A bolt of lighting hit a 50 foot tree across the street from my apartment building a few hours ago and brought it down. Luckily, it broke and fell in a way that it missed that building by just a few inches. They say the storms tonight are going to be even worse so here's hoping they are wrong.

Please pray for my friend and co worker, her cancer has returned and she is asking for all to please pray for her. A few years back she survived brain cancer this is Esophageal cancer. She is starting chemo next week.

She is in my thoughts.

Wish I could crawl back in to bed but I have to head out soon. I need to make a big food shopping trip, we have nothing in the house. Today is my husbands birthday. Not sure what we're doing. Hoping I can pull myself together this evening so we can go out for a nice dinner. If not, we'll grill steaks and I'll bake his favorite cake. He'll be happy either way.

And we are now UNDER two weeks away from the half-way point to the 2015 edition of Christmas Day.
(And I hope that's not too scary a way to begin the weekend!)


Well, Folks, it just keeps getting hotter and more humid by the day.
Step out the door in the morning and it hits you like a warm, moist blanket.
(And to paraphrase the Scarecrow, "I think it's going to get worse before it gets better".)
This morning has again started off humid and we stand at 78 degrees.
