I really never used recipes. Learned to cook from my mother and she "just knew" how much of something to put in. Last year I started writing down my recipes as I made them. All my friends love pumpkin bread so I thought I'd post my recipe.
Kim’s Pumpkin Bread
Preheat oven to 350.
Grease and flour two bread loaf pans
Use two bowls
1st bowl
2.5 cups whole wheat flour
½ cup yellow cornmeal
2 teaspoons baking soda
1 teaspoon ginger
2 teaspoons cinnamon
½ teaspoon cloves
½ teaspoon nutmeg
¼ teaspoon salt
2nd bowl
1.5 sticks unsalted butter room temperature
2 cups sugar
2 cups canned pumpkin
½ cup sour cream
4 large eggs
2/3 cups water
Add ingredients from 1st bowl to second bowl and mix just until blended
Stir in:
1 cup raisins
1 cup walnuts
Put ½ mix in each loaf pan and bake for 55 minutes
Take out and immediately turn pans upside down on wire rack
Remove pans. Wait 5 minutes, then flip loafs over and let cool to room temperature
