Whats everyone having for dessert? I've been looking at recipes, but nothing is really shouting out to me. I might bring 3. Pumpkin pie of course, but i dont know about the others. So any suggestions?
 
Three desserts for Thanksgiving is very festive! I vote for three! Pumpkin pie (with whipped cream available). That takes care of tradition. I would go for family favorites for the other choices. Cherry or blueberry. Perhaps a cream pie - coconut cream or banana cream? You could also bring some ice cream for the children - maybe neapolitan? And - a plate of Christmas cookies - even on e kind - would certainly get attention.
 
I like to make a pumpkin cake roll

Prep: 45 min - Cook: 15 min - Cool: 60 min

CAKE:
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup LIBBY'S 100% Pure Pumpkin
1 cup walnuts (optional), chopped

FILLING:
1 pkg. (8 oz.) cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter or margarine (we recommend LAND O LAKES® Butter), softened
1 teaspoon vanilla extract
1/4 cup powdered sugar (optional)


FOR CAKE:
PREHEAT oven to 375°F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:
BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

Makes 10 servings

Note: Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.
 
Or Cranberry Cheesecake Bars


Ingredients:
2 C all-purpose flour
1 1/2 C quick or old fashioned oats
1/4 C packed light brown sugar
1 C (2 sticks) butter or margarine, softened
2 C (12 oz package) white chocolate morsels
1 pkg (8 oz) cream cheese, softened
1 C sweetened condensed milk
1/4 C lemon juice
1 tsp vanilla extract
1 can whole cranberry sauce
2 Tbsp cornstarch

Instructions:

Preheat oven to 350 degrees. Grease 13x9 inch baking pan

Combine flour, oats and brown sugar in large bowl. Add butter, mix until crumbly. Stir in white chocolate morsels. Remove 2 1/2 C morsel mixture for topping. With floured fingers, press remaining mixture into prepared pan.

Beat cream cheese in large mixer bowl until creamy. Add sweetened condensed milk, lemon juice, and vanilla extract until smooth. Pour over crust.

Combine cranberry sauce and cornstarch in medium bowl. Spoon over cream cheese mixture. Sprinkle reserved morsel mixture over cranberry mixture.

Bake for 35 to 40 minutes or until center is set. Cool completely in pan on wire rake. Cover. Refrigerate until serving time. Cut into bars.
 
My suggestion was going to be a pumpkin roll too! Mmmmmmm! (my recipe is very similar to MrsH's) Or what about Pumpkin Cookies? (one of my favorites) or sugar cookies cut out like turkeys?

Pumpkin Cookies
1 C. Brown Sugar
1 C. Sugar
¾ C. Shortening

Cream together & add:
2 eggs
3 T. Pumpkin Spice
2 C. Pumpkin

Mix Well
Stir in:
3 ½ C. flour
2 tsp. baking soda
1 Tbsp. baking powder
pinch of salt

Bake @ 400º 8-10 minutes

Icing
10 Tbsp. Brown Sugar (1/2 C. + 2 T.)
4 Tbsp. Milk (1/4 C.)
4 Tbsp. Margarine (1/4 C.)
½ tsp. vanilla

Combine & heat to boil. Remove from heat & add powdered sugar to desired consistency. Spread (while warm) over cookies.

Pumpkin Spice Cake
1 pkg. Spice cake mix
3 eggs
1 C. canned pumpkin
½ C. water
½ C. veg. oil
1 pkg. instant vanilla pudding
1 tsp. cinnamon
Combine cake mix, eggs, pumpkin, water, oil, pudding mix, & cinnamon. Beat at med. Speed for 5 min. Pour into a greased & floured pan. Bat @ 350º for 45-55 min. Frost w/ cream cheese frosting.
Frosting:
8 oz. crm. Cheese
½ stick marg.
1 tsp. vanilla
1 box powdered sugar (varies according to desired consistency)

Pumpkin Roll

Beat 3 eggs at high speed for 5 minutes. Gradually add 1 C. sugar. Stir in 2/3 C. pumpkin & 1 tsp. Lemon Juice. – set aside
Stir Together:
¾ C. flour
1 tsp. Baking Powder
2 tsp. Cinnamon
1 tsp. Ginger
½ tsp. Nutmeg
½ tsp. Salt
(fold into pumpkin mixture)
Spread into greased & floured 15 X 10 X 1” pan. Top with 1 C. walnut pieces (optional.) Bake at 375º for 15 mins.

Turn out on towel sprinkled with confectioners sugar & roll towel & cake. Cool 15-20 minutes.

Mix together & fill with:
1 C. Sugar
8 oz. Cream cheese
4 T. Margarine
½ tsp. Vanilla
Reroll & chill.



Christmas Cut-Out Cookies
1 C. Shortening (Jean uses ½ C. margarine & ½ C. Crisco, or 1 C butter flavor Crisco)
2 C. Sugar
3 Eggs
1 C. Sour milk (1 C. milk minus 1 tsp. + 1 tsp. vinegar)
1 tsp. Baking Soda
4 tsp. Baking Powder
Pinch of salt
½ tsp. almond extract
5 C. flour

Works best if it is set in the fridge overnight. Roll ¼” thick & cut out. Bake 7-9 min. @ 350º.


My hubby's favorite cake
Spice Cake
2 ¼ C. flour
1 tsp. soda
1 tsp. baking powder
½ tsp. salt
½ C. shortening
1 ½ C. sugar
1 tsp. vanilla
2 eggs
1 ½ C. sour milk (1 ½ C. minus 1 tsp. milk + 1 tsp. vinegar)
1 C. raisins (wamed in 1 C. water)
2 tsp. cinnamon
1 tsp. clove
Bake @ 350 for 30 minutes – Must use wax paper or cake will stick. Spray wax paper with cooking spray.

Easy Panuche Icing
Melt in sauce pan
½ C. butter
stir in 1 C. packed brown sugar
boil & stir over low heat for 2 minutes. Stir in ¼ C. milk
bring to boil, stirring constantly. Cool to lukewarm. Gradually stir in 1 ¾ to 2 C. powdered sugar. Place pan in ice water & stir until thick enough to spread.


Paper-Bag Apple Pie (Mom)
1 unbaked 9” pastry shell
3 – 4 large baking apples (about 2 ½ lbs.) 4-5 C.
½ C. sugar (for filling)
2 T. flour
½ tsp. cinnamon
2 T. lemon juice
½ C. sugar, for topping
½ C. flour for topping
1/3 C. butter or marg.

Make an unbaked 9” pastry shell, using packaged pie crust mix or your own recipe. Pare, core, & quarter apples, then halve each quarter crosswise to make chunks, about 4 cups; place in a large bowl.
Make filling; Combine ½ C. sugar, 2T. flour & cinnamon in cup; sprinkle over apples; toss to coat well; spoon into pastry shell; drizzle with lemon juice
Combine ½ C. sugar & ½ C. flour for topping in a small bowl; cut in butter; sprinkle over apples to cover top. Slide pie into a heavy brown paper bag large enough to cover pie loosely (grocery bag); fold open end over twice & fasten with paper clips (I fold once & use staples); place on large cookie sheet for easy handling. Bake at 425º 1 hr. (apples will be tender & top bubbly & golden) Serve plain or with cheese.
 
ummm good, what wonderful recipes you all have posted.

I like to make Pumpkin Bars, they are easy (love easy) and really good.

Last year I served pumpkin dip with gingersnaps to dip in them. Very yummy
 
I'm making Pumpkin Log, a Gooey Carrot Butter Cake (Paula Deen's recipe), and an Apple Pie. I keep changing my mind, though!
 
We are making pumpkin pie and probably cherry pie. I am also making a decadent carrot cake with raisins.

My mom always makes pumpkin pie and some other pie (whatever she feels like), sometimes pumpkin rolls and my husband doesn't like homemade apple pie so he gets a store bought apple pie. I don't eat pie at all so my mom makes me cinnamon pin wheels out of the leftover pie dough. They are delicious!
 
:family:When we go to my sister's for Thanksgiving, she usually has a couple pies, pumpkin and apple. This year her birthday falls on Thanksgiving, so her husband will also buy a cake. When I was growing up, my mother always made mincemeat bars every Thanksgiving. They are so good!
 
My suggestion has nothing to do with pumpkin anything and I would eat it for breakfast!!

Tiramisu and I have a terrific recipe if you're interested.

thanks everyone for your fabulous suggestions. I'm thinking about a mint chocolate cheesecake, chocolate pecan pie, and pumpkin pie. But i'll probably change my mind again though.... I might make the chocolate hazelnut tart too! That sounds decadent.
