I already posted this in another thread, but I'll repeat it here: in a short story this morning, I read a sentence that described autumn days as "crisp on both ends and languorous in the middle." Isn't that a great description of the kind of days we wait for this time of year?I can't wait to go outside for lunch and sit in my car, bask in the sun with the windows open with just the slight coolness that makes it feel like the early Bers out there.

Harlowe is doing pretty good, thanks. She has been eating well the past couple of days, and enjoying time on the deck in the evenings. We took a walk near a creek last night, and she had fun checking out the new scents.

Buttercup is well. She has been enjoying new scents in both the front and back yards. London has been walking her in the evenings and she's been gone a little longer than usual due to Buttercup taking her sweet time sniffing everything her nose comes in contact with. It drives London insane. LOL

Wisconsin Beer Cheese Soup
1 1/2 cups diced carrots
1 1/2 cups diced onion
1 1/2 cups diced celery
2 cloves garlic, minced
1 teaspoon hot pepper sauce
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups chicken broth
2 cups beer
1/3 cup butter
1/3 cup flour
4 cups milk or half & half
6 cups shredded sharp cheddar cheese
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon dry mustard
popped popcorn & bacon for garnish
In a large saucepan over medium heat, stir carrots, onion, celery, and garlic together. Stir in hot pepper sauce, cayenne pepper, salt, and pepper.
Pour in chicken broth & beer; simmer until vegetables are tender, about 12 minutes. Remove from heat.
Meanwhile, heat butter in a large soup pot over medium-high heat. Stir in flour with a wire whisk; cook, stirring until the flour is light brown, approximately 3 or 4 minutes. Gradually stir in milk, whisking to prevent scorching, until thickened. Remove from heat, and gradually stir in cheese. Keep warm.
Stir beer mixture into cheese mixture. Stir in Dijon mustard, Worcestershire sauce, and dry mustard. Adjust for hot pepper sauce. Bring to a simmer, and cook 10 minutes. Serve topped with popcorn, shredded cheese and bacon.
{One thing I've found is that the vegetables don't get soft enough, so I have sautéed them in butter a bit first}

Ready In: 1 Hour 15 Minutes
