Good Morning, Pines Pals, Preparing to Pursue Perfect Periodic Party Promotions.

And nothing promotes the Pines quite like Carl's carefully perfected treat of choice, the ever-delicious Fired Twinkies accompanied, of course, by a tall one of the Sweetest Southern Iced Tea this side of Heaven.


OK. Now, let's promote today's figures:
Days to Halloween: 12 (Really getting close to SINGLE DIGITS!)
Days to the Season: 25 (Barely over 3 1/2 weeks!)
Days to Christmas Day: 67 (Under 2 months and a week, now!)
Nice!


It was actually a bit on the too-warm side here yesterday, with somewhat elevated humidity. (Felt just a little like we had returned to Summer!)
Today should be warm again, but dry with little chance of rain until at least Friday.
We stand just over 65 degrees at this hour here in the capital city.


Well, now. It's Pines Day again. And so soon.
(Seems like we were at this point just last week at this time.)
Anyway, tonight's festivities should be a bit laid back as Carl and crew prepare for next Wednesday's big pre-Halloween bash. That is certainly one you don't want to miss, since our friendly activities director will really be in his element!

Good morning MMC! Merry Pines Day!!! What a beautiful morning. Started out at 55º, going up to 75º. We have some low lying fog - looks so pretty with the sun shining through against the changing trees.

I just noticed the "new" chat room. Pretty cool!

How is everyone?
Bit of a rough start to the day but all is well even though very hetcic. My youngest threw up first thing this morning but seemed fine after. He begged to go to school and says he feels well. He seems fine so I let his teacher know to ring me if needed.

Thanks! I put a tablespoon of canned food over her food this morning & it was enough to get her to eat 1/2 her food anyway so I could give her medicine. Fingers crossed! Last night I didn't need it, she ate on her own. So hopefully this will be the answer when needed! :)
 
Good Wednesday Morning MMC! Happy Pines Day! Well I got a text from a friend of mine that her father passed away on Monday. He wasn't sick or anything. He had a massive heart attack on Sunday and passed away Monday. Sad. I don't know her for too long but she's a good person and I feel bad about it. I always feel when something bad "out of nowhere" happens it's worse than when you can prepare yourself for it. Maybe not for some people but that's how I am at least. Anyway, sorry to bum anyone out! It's another nice warm day here. The last one before the October chill returns. Hope everyone has a good day! Since I bummed you out with my post I'll post something funny in a moment.

Well we had a change of plans. I stopped at Moms after work & my friends mom was there visiting - just when I was ready to leave, my hubby showed up....so I was at moms a lot longer than planned. Then Jim informed me that our nephews were coming over at 7:30 - they are staying at my in-laws this week & they play cards on Tuesdays so we got the boys. Until I got to the vet, the grocery, the pharmacy, dropped off moms groceries - it was about 7:30. We had leftovers. So I'm still hungry for taco's. Ha ha! :D
Jim is on vacation this week, I'm not use to him being home so early! ;)
 
I am just using this kit tonight :)
It's actually quite good!



When I have more time and all of the ingredients, I like to make this recipe:

Taco Bake

1 1/2 pounds lean ground beef
1 (14.5 ounce) can diced tomatoes with green chile peppers, drained
1/2 cup water
1 cup sour cream
1 (1.25 ounce) package taco seasoning mix
8 ounces shredded Colby-Monterey Jack cheese

1 (18 ounce) package corn tortilla chips (I USE FRITOS, SO GOOD :) !!)


  1. Preheat oven to 350 degrees F
  2. In a medium skillet over medium heat, brown the ground beef and drain fat. Add the diced tomatoes with green chile peppers, water, sour cream and taco seasoning mix. Let simmer for 5 to 10 minutes.
  3. In the bottom of a 9x13 inch baking dish, place a layer of tortilla chips. Cover with a layer of the meat mixture then a layer of cheese. Repeat this process until the last layer is cheese.
  4. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly.
I don't think I have ever seen that kit in the store ~ I'll have to pay more attention.

Beef Nacho Casserole


1 lb. ground beef


1 jar (12 oz.) chunky salsa


1 C. corn, thawed, drained


¾ C. miracle whip


1 T. chili powder


2 C. crushed tortilla chips, divided


2 C. (8 oz.) shredded Colby/Mont. Jack cheese, divided




Heat oven to 350º. Brown meat, drain. Stir in salsa, corn, dressing, & chili powder. Layer ½ each of meat mixture, chips & cheese in 2 qt. casserole. Repeat layers. Bake 20 min. or until thoroughly heated. Top w/ shredded lettuce, tomato, & sour cream if desired.
 
We're lucky that when we're in the living room about to head to the bedroom, Loki will grab one of his plush toy, wait for us to put him up on the bed (yeah not good I know) and he'll settle down quickly on his pillow. It's like his own nighttime routine or something.

Had an intense afternoon of work ... Got out late ... Got stuck in construction traffic for an hour ... Then an unmarked detour ... Then the road was blocked by a car crash ... The when I got home the DVD set that Amazon said was delivered to our mailbox wasn't there ... Then Mr. accidentally spilled a whole box of chicken pieces. This evening HAS to improve at some point ...

The only good thing so far, aside from finally getting home to Mr., is seeing that chat has returned to MMC. Looking forward to chatting with everyone!

My brother had taken 2 cookies for snack last night. He put his dish down, turned around for a few seconds to do something on his phone. When he turned back around to take his first cookie out he said wait didn't I take 2 cookies? There was only 1 in his dish...View attachment 32423

Another day in the books, it hit 83f here today, it is the back half of October and we are sleeping with the windows open.
