I had such a hectic day and I am so physically and mentally exhausted. I did not sleep well at all last night, I must have slept 2 hours max. Now I'm practically falling asleep typing this. I stayed in bed as long as possible this morning, then my mom forced me to get up so I could get ready for my classes. I had three in a row and my professor gave us a pop quiz in EVERY class. They were so hard that it was actually ridiculous. He told us, "I have no choice but to do this," and a girl in my class laughed and said, "Oh, really? You had to give us a pop quiz? You could have been like hey guys, study for a quiz on Monday." I'm on her side! There is no book of rules saying you have to give pop quizzes. I understand we need points in the gradebook since the early progress reports are released in a couple of weeks, but still - they don't need to be pop quizzes! So that was frustrating, I have a lot of homework and studying to do, and my mom's surgery is on Wednesday. I will hate sitting in class and not knowing what is going on!
As soon as I got home from my classes at 4:30 PM, my mom and I decided to try the new grocery store out since I wanted to pick up a few things. We were there for an hour because it was so packed. When I got home, I ate dinner and then I decided to bake cupcakes.
I seriously wish I could pass out the cupcakes that I made because they were amazing! I made them using brownie mix instead of cake mix so they are super fudgy. The best part? When you bite into them, the middle is chocolate chip. I took some batter and filled it in the cupcake containers, then dropped in a ball of chocolate chip cookie dough in each, then covered it with batter and baked. Yummy!! Of course I iced them with chocolate icing so they are a major indulgence.
