Good evening everyone! I must say that Scottish weather was reasonable today. Although it was partly cloudy and slightly windy, we had sunshine most of the day. Nice way to start spring. :] I managed to note down some ideas for my speech but it seems that I am asked to share my personal experience of living and studying abroad so I guess as soon as I will make my talk fluent, it should be fine.
Went for a long walk to clear my mind and stopped by the coffee shop to get some yummy latte. That was my weekly treat. ^^
I feel kinda bloated today probably because I ate more fruits and vegetables than usually (spring always puts me in the mood of eating more clean) so I am probably going to take a glass of water and read a book.

At one I found this figurine. It took my breath away and made me cry. I don't know if I ever shared this before but my first son was still born 31 years ago. His name was Timmy. This just made me think of that precious little boy who is now safe in the hands of Jesus .

Santa Clause 1& 2 are on tv tonight. Although I like it - and as a kid only saw chrissy movies etc 1 week before Christmas - I feel it reduces the specialness we try to create for kids.

I am heading out in a few minutes to go food shopping. I probably should have been there already, it's going to be crazy busy today. I still don't know how much snow we will be getting. I heard as little as 4 inches and then I heard up to a foot. So who knows, we'll see what happens. I'm really looking forward to the temperatures warming up a little bit. I had the dogs out back earlier and it is so darn cold!
Not too much else going on. Typical day of chores. I'm also going to visit my parents later this this afternoon for a little while. I hope everyone is well and has a happy Saturday!
Absolutely - this was on Facebook, but I tweaked it a little bit. This is how I made it, & I wouldn't change a thing!: :smile:
Mexican Stuffed Shells
1/2 pound ground beef (or ground turkey)
1 package low-sodium taco seasoning
8 ounces cream cheese
20 jumbo pasta shells
1 1/2 cups corn & black bean salsa
1 cup taco sauce
1 cup cheddar cheese
1 cup Monterrey jack cheese
For toppings:
3 green onions
Sour cream
Preheat oven to 350°.
In a pan brown the ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Stir together and mix well. Set aside and cool completely.
While ground beef is cooking, cook the pasta shells according to package directions; drain. Set shells out individually on cutting board or baking sheet so that they don’t stick together.
Pour corn black bean salsa on bottom of a 9×13 baking dish. Stuff each shell with 1-2 tablespoons of the meat mixture. Place shells in 9×13 pan open side up. Evenly cover shells with taco sauce. Cover dish with foil and bake for 30 minutes.
After 30 minutes, add shredded cheese and bake for 10-15 more minutes with the foil removed. Top with green onions or olives if desired. Serve with sour cream and/or more salsa!

Im still here not to worry! We all get busy with personal stuff and thats what I was doing. Nothing bad, just busy with family. I'm back with my Christmas family here! Just popping by to say hi! Tonight William is sleeping over at the grandparents. Ash and I have an evening alone. This is our 2nd evening without William since he was born. Holy moly. Well off I go! Im going to try my best and be around more! I really miss all of you and miss being involved in everything!
Out here, AccuWeather is saying 1 to 3 inches; the meteorologist on Boston.com (who has called them pretty accurately this season) is saying 2 to 5, but is also saying he'll know more when he sees the models later today. I'm happy for us, but I feel bad for PA, NY, and NJ. They'll be getting what we thought we were going to get.

One of our local TV stations was saying 3-5 inches this morning, but they have been wrong most of this season. I have Monday off, and I will be picking up the wife and kids from their school and work which are both about 1/4 mile away. So a little shoveling is in store.

What are you all up to? DH, the kids, and I had a blast at the movies. Poor DS...he fell asleep during the previews and woke up with five minutes to go, but said he still loved the movie!He's so sweet. Now, we're watching ABC Family. It's a whole night filled of Disney movies and my kids (and myself) are thrilled. We have all kinds of snacks for the movie and we'll probably do a pizza for dinner. DH is working, so it's a fun night for just us again. I'm sure we'll end up doing a sleep over again, but that's okay, they're only little once!

My BIL is over, the kids adore him and are having fun beating him up.
We will probably watch a movie later on, Bad Grandpa came in as our Netflix DVD, that looked pretty funny in previews.
