Merry Monday. Almost time to get back into the swing of things. Take the FIL out for lunch as it's his birthday. Have a few people coming over for a supper meeting because a holiday Monday was the only time the schedules would be open. So, the day will be spent scurrying around, cleaning, cooking, and enjoying company.
I've already transitioned into fall prep. Yesterday was cranberry pot roast dinner, and I've picked up some canned pumpkin. I'll make a pumpkin dessert for tonight. I just haven't figured out which yet. It'll come to me.
The pot roast is super simple too. In your slow cooker, sprinkle the bottom with a package of dry onion soup mix. Place your roast on top, sprinkle with salt and pepper, and then spread a can of cranberry sauce over the roast. I used whole cranberry sauce, but either will work. Add about 1/4 cup of water. Cover and cook on high for 6 hours, or low for 8. Once done, remove the roast to rest. Dissolve one tablespoon of cornstarch in water and add that to the roast drippings. Stir and continue cooking until thickened. Slice the roast and serve with the sauce. Heavenly and delicious.
