Ripening is when the alcohol gets soaked into the cake over time

Mostly whatever alcohol you like to use. Traditionally it's brandy, rum, sherry, or whiskey

So, a 12 to 24 hours before you make your fruitcake you soak the dried fruit in the alcohol of choice
