Being 13 weeks and 2 days pregnant...I am CRAVING all things pumpkin!! hahahaha

I wonder if there's a pumpkin milkshake or pancakes or coffee??? hahaha

I might have to make a pumpkin pie this weekend!

I have seen recipes for pumpkin pancakes! I don't have any of them saved, but I know they exist. Man, can you imagine, pumpkin pancakes with some warm maple syrup...Oh geeze! I'm not preggo and I am still drooling thinking about it!

I too have seen recipes for pumpkin pancakes (do a search at allrecipes.com and you'll find a page-full of recipes), and our local dairy store BRAUMS carries (seasonally) pumpkin ice cream and it does make great shakes, malts, sundaes, etc. Can't wait for it to come in season!

I have bought pumpkin fudge before and it was great but I have never found a recipe for it that I liked. Pumpkin pancakes sound good to.

Our temps have been unseasonably cool the past few days and it has made me really think fall/winter/CHRISTMAS!! hahaha
And Thanksgiving...and I really want that pumpkin! I went to the store and didn't get the pumpkin!! I could've kicked myself!! :-?

This is not a recipe but a tip for Pumpkin Pie Filling.

Of course I use canned filling (it has to be Libby's) but I always add 1 or 2 extra eggs to the recipe. It makes the pumpkin filling creamer and lighter. This was my Mom's secret and her pumpkin pies were the best, and her crust was always the best no matter what kind of pie she made.

It just dawned on me I have never had anything with pumpkin in it. Mom, dad, or any of my grandparents ever used pumpkins for cooking...hmmm maybe I should change it up this year :)

Oh most definitely you should! There's been several of my friends that never realized that there are several in the squash family that taste very similar to pumpkin and may be used interchangeably for the most part, i.e. cushaw (sp?) and zuccinni. My wife uses them all the time for "pumpkin" bread, cakes, muffins, etc. (she didn't know you could either until my mother and I "educated" her cheesy - I grew up on the stuff). However I don't recall if we've ever used them for pie - I think the color would be just wrong.
Hope you find a good recipe for the real thing too, and I'm sure you'll love it. Good luck.
