Oh wow, school has not started here yet. Depending on where you live some schools start the Monday before Labor Day or during the week of Labor Day.

I was planning on smoking a turkey this Saturday for my DS' birthday party but the remnants of the Hurricane Debby put a wet downer on that idea. Instead, we will inside and I will set up Taco Bar.
 
I tried to post a picture of a Thanksgiving breakfast casserole today, but MMC wouldn't let me (it said the file was too large). So in lieu of a picture today, I'm sharing the recipe here instead. Enjoy:

Ingredients​

2 pounds sage sausage
2 Granny Smith apples, diced
1 large yellow onion, diced
1 tablespoon chopped fresh sage
12 large eggs
2 cups whole milk
1/2 cup half-and-half
Kosher salt and freshly ground black pepper
Salted butter, for greasing the lasagna pan
6 cinnamon raisin English muffins, cut into bite-size chunks
2 1/2 cups grated white Cheddar
2 tablespoons chopped fresh parsley

  1. Set a large skillet over medium heat and add the sausage. Cook until browned and cooked through, 7 to 9 minutes. Remove the sausage with a slotted spoon and drain on a paper towel lined plate. Without cleaning the skillet, add the apples, onion and sage and cook until the onion has softened, 2 to 3 minutes. Remove the pan from the heat and set aside.
  2. Mix together the eggs, milk and half-and-half in a large pitcher or bowl. Season with salt and pepper and set aside.
  3. Grease a large casserole dish with some butter. Layer in half the English muffins, half the sausage, half the apple/onion mixture and half the cheese. Repeat with the other half of the same ingredients, ending with the cheese. Slowly pour the egg mixture all over the top. Cover with Soulastic wrap on top of the casserole with aluminum foil. Bake for 35 to 40 minutes, then remove the foil and continue to bake until the top is golden brown and slightly crisp, 10 to 15 minutes more.
  4. Sprinkle with the chopped parsley. Serve warm and enjoy.

Happy Week Into August! Today folks we have 113 days remaining until Thanksgiving, 86 days left until November, and 25 days to go until The Bers. We move along in our Summer Sweatfest with our next milestone still being just under 2 weeks away which will be the 100-Day Marker till Thanksgiving. And since it’s Wednesday, one of my favorites, it is time for our Weekly Wednesday Poll below!

What do you hope to enjoy in the remainder of the summer?

  • Nothing – I want it to end.
  • I have a summer vacation planned.
  • I’m looking forward to enjoying the heat/humidity.
  • Labor Day Weekend I am looking forward to.
  • I’m going with D. I don’t want to rush to it but I am taking the Friday before off to have a 4-day weekend. It should be fun and of course that weekend is very special with The Bers beginning. Turkey friends I hope you are enjoying the middle of your week. Enjoy your Wednesday. Have a great Week Into August!​
 
My first inclination was to choose A, but since Labor Day Weekend is in here, I've got to go with that. It's the unofficial end of summer anyway, and I can't not be excited about a long weekend, football, and breaking out the grill one last time. It's a time to enjoy kicking summer to the curb.
 
I will go with B because I have short work weeks all month long. Technically Labor Weekend falls under B and D this year.

I just know the pull to the Bers is extremely strong now, but I have a great month of August to enjoy with the time off. It is like a tug of war on my holiday emotions! Lol.
 
I'm looking forward to enjoying the heat and the outdoor heated pool. Praying no hurricanes touch my part of Florida. We've been very lucky living so near the ocean.

September is just a continuation of Summer, for me. October is a transition month and we can get some beautiful sunny dry days, especially toward the end.
