I have been putting together a menu over the last few days. This is the first Thanksgiving since I went Vegan. I however do not eat "Meat Substitutes" so there will be now Tofurkey or anything like that. Just probably what other people would consider sides.

I am just starting to think about our Thanksgiving meal ~ since I just found out we are definitely hosting lunch for my in-laws. Instead of traditional turkey I'm 95% sure we are going to have turkey ribs. Now I need to figure out the sides. Everyone brings a dish...I'm sure there will be 7 layer salad, deviled eggs, mashed potatoes, corn, pumpkin somethings.... I need to get to work on that!!!

My side of the family (for supper) will have turkey - 1 smoked & my Dad will make 1 regular 'ol turkey. And all the fixings you can imagine, since everyone brings a side dish & I have a large family! :smile: I can smell it already! :grin:

I think it is the sides that make the meal anyway.

I agree ~ and they are the things that make you feel miserable since you (I) have to try them all! :lol:

My already small family dinner with shrink by one this year leaving our family of 4 to just 3 (my adult neice is going to visit her parents out of state) but there will be no shortage of food on the table.

No need for a huge turkey since I don't eat meat but I do make a roasted chicken for my girls and I have fish! That's the only difference from our table and many others. We'll still have mashed potatoes & gravy, sage stuffing, candied yams, mac 'n cheese, corn pudding, collard greens and this year I'll add a new side - au gratin cauliflower. My oldest loves it! Can't forget the yeast rolls. For dessert we'll have pumpkin pie and Dutch Apple pie.

On the menu we have:

Appetizers:
cheese/cracker plate
a few diff types of chips/dips

Main Meal:
28lb turkey
Spiral ham
mashed potatoes
green bean casserole
baked carrots
collard greens...my BIL makes them soo good!
macaroni and cheese
rolls

Dessert
Apple pie
Brownies with cream cheese mixed in
cheesecake with strawberries on top

I cannnot believe it is next week!! :???:

Yum, that sounds delicious! Definitely something I'd like to try for dinner sometime :) Thanks for sharing!

Also, I'm not sure if this is the right thread to ask this in, but I found a neat recipe for buttermilk brine turkey and I was wondering if anyone had any tips on brining in general? I read some reviews saying brining anything can turn out soggy and not very nice looking so I'm really on the fence about trying it; I just liked the idea of a different way of cooking the turkey. Thanks in advance!

This will be my hubby and my first year making Thanksgiving for our family... I have to admit i'm a little nervous! We have a TINY oven so i'm hoping a turkey will even fit.. we might do cornish hens or a chicken instead i'm not sure honestly lol. I'm also worried about making too many or two few sides. Do you ask your family to each bring something or do you make it all? Any tips for a first timer?
