Freezing stuff..idk.. We almost always rewrap and I place in freezer bags which then go inside vacuum sealed bags and dated.I never understand expiration dates on anything...some seem legit...some way off.

I use my deep fryer pots for brining. Usually the pots that come with the fryer kits are junk..aluminum pots. Its bad because people look at the difference in prices and go with the cheaper and they dont have a stainless pot. If you buy a seperate stainless pot it costs more than the original higher priced kit that included a SS pot. I wont even make a turkey now unless its been brined, the difference in quality is unreal.We will probably start thawing "The Bird" this Sunday in a cooler on the back porch. It is too large to fit in a brining pan!

Glad you are taking care of yourself.I have decided to order a Heat and Eat meal from a local grocery store deli. I will make a few things myself but after not feeling great the last 2 weeks I will make a grocery run on Friday the 18th and then can pick up anything else on the 22nd when I pick up the meal. I may pick up a turkey breast now to have on hand for Christmas or New Years, or maybe just for a Rudolph Day in 2023.

Non Butterball turkeys we found were all 19 lbs or smaller. We got Butterballs which were all over 19 lbs. and strangely nothing smaller.I went to the grocery store today but all they had were 19lb turkey and we usually get 24 -25 so my plan is to call around see if anyone can hold one for me.
Do you have a formula for your brine you can share?Holly's family doesn't want to go back to the "old way" of a non-brined turkey. Plus we do the "cheater rub" smoked dry seasoning, tastes just about like the real thing, an actual smoked turkey. The "before and after" is like you said - just unreal. We have been doing it this way for the past two or three years. We will never go back to "unbrined" lol.

We do...the last few years I've done this thread I post a retrospective on Thanksgiving...So next week I will be off on Thursday and Friday. I was going to work on Friday originally, but my brother and his wife can't make it down here on Thursday; he works for a TV station in Houston and it's all hands on deck on Thursday morning because the parade is a big ratings draw for them.
I can't believe we are just 10 mere days away. Once the Bers arrived everything just kicked into fast forward. It makes me kind of sad in a way. I hope we do a "Thanksgiving retrospective" or some kind of look back when we launch the new thread. Geez, I even don't like to think that we'll be launching a new thread in ten days.
I'll enjoy the next ten days to the fullest.
