Happy January Weekend! Today folks we move along and see that we have 327 days remaining until Thanksgiving, 301 days left until November and 240 days to go until The Bers. We move along in our Winter Wonderland with our next milestone coming tomorrow (on Sunday). It will be the 300-Day Marker till November. Soon folks we’ll have more 2’s counts than 3’s counts in this thread. Hard to believe huh? It’s Saturday my friends so it’s time to enjoy our Quiet Weekend Period and it begins with Part 1 today of 2. And I love our quiet weekends. Having topics all week long is great of course but then we reach the weekend and it’s time to relax a bit. And I for one am enjoying it. I will try to as much as I can this weekend. Mostly a laid-back weekend here but fun stuff too (and errands). But a little more inside now with January being here and heading into the heart of winter soon. It’s gotten colder here but not too cold. Maybe cooking a turkey in the oven would help heat things up huh? Turkey friends the best to you today on this Saturday. I hope your weekend gets off to a great start. And I hope you are doing well (as are your family and friends with you too). Gobble Gobble to all of you out there in turkey land. They definitely do not look as good as the picture when you first take them out of the bag. In fact, you will probably wonder if you made a mistake when you first see the thing. But, after 1.5 hours in the oven at 300 degrees, and then another 15 minutes under the broiler, you’ve got golden-brown Cajun goodness that looks a lot closer to that picture, even if not perfect.

And as for the taste, it’s definitely my favorite turkey I’ve ever eaten. I can only imagine that a deep-fried turkey would best it (I’ve never had deep-fried turkey before), or perhaps a smoked turkey would also. I’ve found that strategically placing pats of butter on the turkey before putting it in the oven helps keep it moist.

Unfortunately, I have some sad news. All of the Popeye’s locations here in my neck of the woods (Southeast Texas) have closed. Apparently, the franchisee either couldn’t afford to pay his employees, or he just flat out didn’t pay them, and just before Christmas all of the Popeye’s locations here shut their doors. I’m not sure where the closest open Popeye’s is now or if someone else will step in and reopen our local ones someday, but I can tell you I’m definitely not driving to Houston or Louisiana for a turkey, so this may very well be the end of the Cajun Turkey tradition for the Escalation household.
I think there was one we went to in Midland (or I could be mixed up with a What a Burger) and Popeyes was in Odessa. I generally dont advocate average people visit Odessa...lol. I had some great times working there, but yall can keep those rattle snakes.
 
Merry Saturday all. Snow on the ground and a weather watch on us. Stayed up late working on oldest daughters '71 Scamp. She come screaming into the kitchen this morning yelling its nothing but a skeleton now. (She seems to forget why all the sheet metal got ordered for her car) told her it will look better by Halloween..lol.
 
If it truly is the end for Popeye's, I'm very seriously considering buying a smoker. I've wanted one for a while now, but I chicken out every year due to the cost. 2025 might be the year that I finally give in. I'm already daydreaming about smoked turkey for Thanksgiving.
Upright charcoal smokers are pretty cheap. You can find them at WalMarts for $60-$70 at spring. I think my 1st smoker was $49.00 and I could do a whole turkey in it. It has increased over the years to homemade and a tow behind now.
 
This is the first year I've gained weight during the holidays. It was only a couple of pounds but it is from lack of mobility. I'm used to being the skinny, athletic one, but no more. To make matters worse, my niece and her husband are coming back. They eat like truck drivers and are athletic and super skinny. I'll have to keep that in mind.

All my life, I actively tried to gain weight, especially muscle. Now, my metabolism seems to have slowed down due to loss of muscle. If I were well, I'd start running again. That was such a good feeling.

I've always loved food. That runs in my family. I guess I need to learn portion control which is something foreign to me.

I've found eating slower helps you eat less but that's just maybe me. I eat 4-5 times per day but most of the time I'm eating rather smallish amounts at once compared to huge Thanksgiving type meals (well except on Thanksgiving of course :)).

Happy January Sunday! Today folks we move along and see that we have 326 days remaining until Thanksgiving, 300 days left until November and 239 days to go until The Bers. It’s Milestone Day folks which is the 300-Day Marker till November. Can you believe it? After today folks 2 out of our 3 counts will be in the 2’s. We move along in our Winter Wonderland with mostly a cold dry weather pattern here. Most of the snow looks to be staying south of us. I’m ok with that. And it’s cold but it’s not brutal cold. Just normal to slightly below normal January type of cold weather. Our next milestone? It’s not till 18 days from now folks. A long way off but it will be Tom Turkey Day #2. Gobble Gobble. We move along in the 2nd half of our Quiet Weekend Period my friends with a brunch Sunday here. Love when we go to brunch, come home, relax, play a game and just chill. Having some homemade pizza tonight too. Should be really good. Just love these type of January days. And definitely have come to appreciate them more and more in recent years. No rush of the month of January. Hope it stays for as long as it can and we keep all our favorite things well in front of us while enjoying the present. Have a great January Sunday!​
 
I have a dilemma--I have leftover turkey in the freezer. I wanted to save it for the next Tom Turkey Day, but tomorrow is going to be a bad weather day and turkey and mashed potatoes sounds perfect.....hmmm.
I hope you treat yourself and enjoy a mini-holiday meal. I think the bad weather and a Sunday combined makes it a worthy swap.

Happy January Week! Today folks we move along and see that we have 325 days remaining until Thanksgiving, 299 days to go until November and 238 days left until The Bers. We move along in our Winter Wonderland with our next milestone a long way from now (17 days to be exact) which will be Tom Turkey Day #2. It’s Monday friends so it’s time for our weekly countdown till Thanksgiving week. Do you want it guess how many weeks it is now? Ok you don’t have to guess. I will tell you like I do every Monday. It’s 46 weeks. Yes, we are moving along in the 40s now here through the heart of winter and will continue that for quite a while. But it’s good to be in the 40s. Let’s you still feel like you have forever to get excited and get ready. I think that’s part of the reason we love our countdowns. Having all year to think about and talk about the fun holidays we countdown too. We want it to last as long as possible when it gets here but we also want the offseason to last as long as possible too so that we have more time (at least in our minds) to get ready for it and excited for it. Turkey friends my turkey will sit in the freezer all winter long. But it will come out sometime this spring and we are going to make it a big Halfway to Thanksgiving eventually. For now here in the first week of January who can think about spring? It’s winter so let’s enjoy it. Have a great January Week!​
