All you guys are bragging about your cool temperatures and low humidity and such! Pffft! We are looking at mid-90's and high humidity for the foreseeable future. That just means I get to float in my pool longer.
I'm leaving work at noon to go with Nancy for her checkup. I'm not looking forward to Savannah traffic, but maybe I can get some Panda Express for dinner!

Glad to hear it!!Thank you! Weekend was very nice! We had some yummy food & drink at the lake over the weekend. Very relaxing! Our A/C is still on - probably will be for quite awhile yet! But I agree it feels so nice outside right now!

Hmmmm - it was all VERY good! If I had to pick just one though, it would probably be the Queso Dip. That was a hit! We also had bruschetta on the grill - that was delicious. And we had those little appetizer rye breads with sausage, ground beef, Velveeta & some seasonings. Those were very good too!
Yes, indeed it would. If we ever take a convertible trip up that way, we'll have to get together!It would be a blast!

Saturday I brought Mom to the lake for lunch - I ordered an unbaked pizza from the drive thru up the road & I made it on the grill. That was quite tasty too!
I'm glad you got to enjoy some heavenly days of open windows! It did feel cooler outside than inside this morning! It's been awhile since that has happened!

I have never heard of Burracho's. I'll have to look them up! Can't go wrong with good queso!
And mom did enjoy pizza at the lake. Our neighbors joined us. I have a new cast iron pizza pan I wanted to try out. It worked well!
Here is the queso I made. I just throw it all in a crock pot & serve with tortilla chips.
Queso Blanco Dip
1 Tbsp cooking oil (veggie, olive, canola - whatever you have)
1/4 cup white onion, diced
1 large jalapeno or serrano, seeds and stem removed; diced
12 oz white American cheese
4 oz Monterrey Jack cheese, shredded
1/4-2/3 cup cream, half-and-half, or whole milk
2 roma tomatoes, seeds removed and diced (I sometimes us a can of Rotel)
1 small bunch cilantro, roughly chopped
Heat the oil in a saute pan. Cook the onion and pepper until softened and reduce heat to medium-low.
Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted.
Add the tomatoes, cilantro, and additional cream a little at a time until you reach desired consistency.
Serve with chips, on migas, or my favorite - a stack of still-warm homemade tortilla’s.
*was very good just dumped in the crock pot – no sautéing required.
