I just looked up Burracho's... looks like they are only in Wisconsin. Another reason to visit! ;) Just look at that queso. Mmmmm

Well, Boo! I thought they had branched out further across the Midwest.
Gotta visit now! ;)

It's delish! Their chips are served warm, and have a hint of lime salt on them.
 
Seems like we will get in a few more mid-80's days here this week and then back into the 70's. One thing about South Dakota, we do seem to get about four months of each season. Unlike my military days in Minot, where the saying was... there are two seasons. Winter and the forth of July.:rolleyes:

I don't mind the 80s if the humidity isn't terrible. The 70s is probably perfect weather though. We have that out there today.

Burracho's is great fresh mex-I love their El Nino, especially!
You're welcome! I agree! I love some good chips, salsa, queso! Yum! As a matter of fact I'm having fresh salsa & chips for lunch now. LOL

I like the store bought ones like that, too, but they don't even compare to these :p
I believe that! And it's hard to find the store bought lime chips around here.

Yep, all the food was very good. Appetizer night is just fun! :)
I have never heard of Burracho's. I'll have to look them up! Can't go wrong with good queso! :)
And mom did enjoy pizza at the lake. Our neighbors joined us. I have a new cast iron pizza pan I wanted to try out. It worked well!
Here is the queso I made. I just throw it all in a crock pot & serve with tortilla chips.


Queso Blanco Dip
1 Tbsp cooking oil (veggie, olive, canola - whatever you have)
1/4 cup white onion, diced
1 large jalapeno or serrano, seeds and stem removed; diced
12 oz white American cheese
4 oz Monterrey Jack cheese, shredded
1/4-2/3 cup cream, half-and-half, or whole milk
2 roma tomatoes, seeds removed and diced (I sometimes us a can of Rotel)
1 small bunch cilantro, roughly chopped

Heat the oil in a saute pan. Cook the onion and pepper until softened and reduce heat to medium-low.
Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted.
Add the tomatoes, cilantro, and additional cream a little at a time until you reach desired consistency.
Serve with chips, on migas, or my favorite - a stack of still-warm homemade tortilla’s.
*was very good just dumped in the crock pot – no sautéing required.
