Good morning Christmas family !

Today I am actually happy, still sad but also happy if that makes any sense at all. Today I am heading to my sister's to help decorate her tree !!! Then after we will go to the mall and maybe later go out to dinner !!! I will be staying overnight with her and her husband as well. It is always a fun day at Christmas when this day comes around and a tradition for us. Of course, I am still sad at losing my Punkin' but I will take her with me in my heart. She can see the tree and admire it along with us when we are finished.

Have a WONDERFUL day my Christmas family, and thank you all so much for being my friend, reading my posts and blog, and making me feel wanted xo

We got a dusting of snow last night (down from the promised 15 to 30cm we were supposed to have)

Good Morning, Everyone!

Another weekend.
(Not many left until Christmas, you know.)
Days to Christmas Day: 21 (Three weeks form TODAY!)

And this weekend has started out cold where we are again in the mid 30's with the possibility of rain and maybe even snow flurries by this afternoon.
No matter. It will be a nice, seasonal atmosphere for Christmas Tree shopping which is what we are off to do, shortly.

Finished decorating my condo last night and will continue work on my father's place today and tomorrow.
(Hey! I'm REALLY getting into the Christmas spirit, now!)

Sorry to hear that! I am sure it was hurtful that it happened to you but you are probably better off without the student in your class. I would assume the relationship with the parent would not get any better.

I knew a parent that constantly had "issues" with ALL teachers no matter what. My child has some of the same teachers that her son had and I didn't seem to have all these problems she mentioned. She eventually transfered schools because she felt everything that went on, in a bad way, was always the schools fault. Well, guess what? Suddenly this new school was full of, in her own words, corrupt teachers.

This parent you speak of might be the same way.

Well it has been a long day and I am exhausted. This is the first time I have had enough time to come on and post today. I hope everyone had a GREAT DAY!!!!!! I getting ready to head to bed so I can get up early and shovel snow in the morning. They are predicting that we will get about 3 inches by tomorrow afternoon. Goodnight Everyone!!!!!!!!

Sure, here it is.......

Homemade marshmallows:


  • 3 packages unflavored gelatin
    1 cup ice cold water, divided
  • 12 ounces granulated sugar, approximately 1 1/2 cups
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (or any flavour you like, experiment!)
  • 1/4 cup icing sugar 1/4 cup cornstarch
  • Nonstick spray
Directions

Place the gelatin into the bowl of a stand mixer along with 1/2 cup of the water. Have the whisk attachment standing by.
In a small saucepan combine the remaining 1/2 cup water, granulated sugar, corn syrup and salt. Place over medium high heat, cover and allow to cook for 3 to 4 minutes. Uncover, clip a candy thermometer onto the side of the pan and continue to cook until the mixture reaches 240 degrees F, approximately 7 to 8 minutes. Once the mixture reaches this temperature, immediately remove from the heat.
Turn the mixer on low speed and, while running, slowly pour the sugar syrup down the side of the bowl into the gelatin mixture. Once you have added all of the syrup, increase the speed to high. Continue to whip until the mixture becomes very thick and is lukewarm, approximately 12 to 15 minutes. Add the vanilla during the last minute of whipping. While the mixture is whipping prepare the pans as follows.



Combine the confectioners' sugar and cornstarch in a small bowl. Lightly spray a 13 by 9-inch metal baking pan with nonstick cooking spray. Add the sugar and cornstarch mixture and move around to completely coat the bottom and sides of the pan. Return the remaining mixture to the bowl for later use.
When ready, pour the mixture into the prepared pan, using a lightly oiled spatula for spreading evenly into the pan. Dust the top with enough of the remaining sugar and cornstarch mixture to lightly cover. Reserve the rest for later. Allow the marshmallows to sit uncovered for at least 4 hours and up to overnight.(DO NOT REFRIGERATE)
Turn the marshmallows out onto a cutting board and cut into 1-inch squares (or whatever size you want) using a pizza wheel dusted with the confectioners' sugar mixture. Once cut, lightly dust all sides of each marshmallow with the remaining mixture, using additional if necessary. Store in an airtight container for up to 3 weeks.[/QUOTE]

I have been a MMC slacker lately! I get a chance to "kinda" check the countdown but struggling to keep up with that.

At least it's good things going on in my life that's keeping me away from the computer. It's the Christmas season!!! I have so many fun things going on and lots of Christmas tv viewing. Then, of course, my usual daily routine to keep up with, grandkids, work and chores.

Getting our tree today!!!!! Our tree stand went missing during the move (my hubby is notorious for throwing things away, grrr!) so he and Jude are headed out to get a stand and the tree! Yay!

It is hard to go on without someone, but I have confidence that you will prevail. Our tortoise Calico is getting old, too; so I am not looking forward to the day when she will no longer be with us. I was reading earlier today (yes, I got up early) in my scrapbooking magazine, and there was an article called "Creativity Heals." I am going through Christmas movies today, not actually watching, but listening sort of while studying. Anyway, I did get to watch the last part of "It's a Wonderful Life", which I watch every Christmas, and I am crying like a baby a the end. Go figure, must be stress or being over tired from all the school stuff.
Now, back to the books!!

Good Afternoon Everyone!!!! It is a snowy day here in central Indy. We are getting just enough to make it look beautiful outside but not enough to make it terrible to drive. I spent most of my morning getting a box full of christmas gifts ready to mail to my sister in seattle. I always send her money to buy christmas gifts for my niece and nephew or order them online and have them shipped to her. I always end up picking more things though that I then have to ship to her. This afternoon I plan on kicking back and watching it snow while watching christmas movies. I hope everyone is having a GREAT DAY!!!!!!!!!!!!!!!
