Good Idea!!!! My Buddy Dale Earnhardt Jr has a vacation house down in Key West. I'm sure he would let us all stay there or at least camp out in his yard. Heck, maybe he will even let us stay on his yacht!!!

Good evening everyone! I was wrong earlier when I wrote we were warming to the 50 later this week. I must have misread that because we are actually getting in on that polar vortex too! yay us! I guess the few inches of snow cover on the ground is helping keep us cold because we are not getting above 44 the next 10 days. Lows at night generally around 13-15 and highs around 32 to 36...sure with the sun that will eat away at our snowpack but we are having another snowstorm Friday night through sunday with up to a foot of snow...and that is not even at the resorts...I am planning a weekend trip to the ski resort this weekend for the first runs of the 2014-15 season. If that does not put me in the Christmas spirit nothing will....infact in am already getting back in it!!!

For the shortbread layer
1 1/2 cups all-purpose flour
3/4 cup firmly packed light brown sugar
1/2 cup butter, softened
1/2 cup finely chopped pecans


For the cheesecake layer
2 (8-ounce) packages cream cheese, softened
1/2 cup sugar
1/2 cup milk
2 teaspoons vanilla extract


For the pecan pie layer
3/4 cup firmly packed brown sugar
1/2 cup light corn syrup
1/3 cup butter, melted and cooled slightly
3 large eggs, lightly beaten
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 1/2 cups pecans


Instructions
Preheat oven to 350.
For the shortbread layer:
In a medium bowl, combine flour and 3/4 cup brown sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in 1/2 cup pecans. Press mixture evenly into bottom of a greased 9x13" baking pan. Bake for 10 minutes; remove from oven, and cool slightly, about 10 minutes.

For the cheesecake layer:
Place the cream cheese in the bowl of a stand mixer outfitted with a paddle attachment, and beat at medium speed until smooth. Beat in sugar. Add milk and 2 teaspoons vanilla, and beat until combined. Pour the cream cheese mixture over the cooled shortbread layer. Bake for 15 minutes; remove from oven and cool slightly, about 10 minutes.
For the pecan pie layer: In a medium bowl, combine the remaining 3/4 cup brown sugar, corn syrup, and melted butter. Gently stir in the eggs, salt, and remaining 1/2 teaspoon vanilla extract. Stir in 1 1/2 cups pecans. Pour pecan mixture over cooled cheesecake layer. Bake for 35-40 minutes, or until center is set and pecan pie layer is a rich brown color.


Notes
These would be a lovely addition to a holiday menu!

As we feared, more trouble...Mr. is scheduled for eye surgery on Wednesday. In May he had a retinal tear in one eye that they repaired with laser surgery. Now he has tears in the other eye that need more extensive surgery. The good news is that the surgeon is confident that the surgery will help. We've had so many misfortunes in recent weeks that I'm jittery.

Apologies for the downer.

Now he has tears in the other eye that need more extensive surgery. The good news is that the surgeon is confident that the surgery will help. We've had so many misfortunes in recent weeks that I'm jittery.

I'm so sorry MerryCarey! I sure hope the surgery goes very well & will repair his eye!! I'll be keeping you in my thoughts & prayers!!! You guys can't seem to catch a break lately!!!

Thank you both. It's like Holiday said, we feel like we can't catch a break lately. Things seem to be turning around, then something else happens. But things must turn around sometime. We know they will, I'm just hoping it will be sooner rather than later.
