I'm sorry to hear that, MerryCarey. Praying that the surgery is successful and that he has a quick recovery. Sending strength and love your way.

So sorry MerryCarey. Will be thinking of y'all and hope all goes well on Wednesday.

Thank you. Your thoughts and prayers mean a lot to me.

Good evening everyone! I was wrong earlier when I wrote we were warming to the 50 later this week. I must have misread that because we are actually getting in on that polar vortex too! yay us! I guess the few inches of snow cover on the ground is helping keep us cold because we are not getting above 44 the next 10 days. Lows at night generally around 13-15 and highs around 32 to 36...sure with the sun that will eat away at our snowpack but we are having another snowstorm Friday night through sunday with up to a foot of snow...and that is not even at the resorts...I am planning a weekend trip to the ski resort this weekend for the first runs of the 2014-15 season. If that does not put me in the Christmas spirit nothing will....infact in am already getting back in it!!!

That's wonderful news, have a great night!

No snow here , but plenty of rain and wind.

As we feared, more trouble...Mr. is scheduled for eye surgery on Wednesday. In May he had a retinal tear in one eye that they repaired with laser surgery. Now he has tears in the other eye that need more extensive surgery. The good news is that the surgeon is confident that the surgery will help. We've had so many misfortunes in recent weeks that I'm jittery.

Apologies for the downer.

I'll be praying for you both MerryCarey (((hugs)))

Good evening,

I am fighting a losing battle to stay awake, I was trying to catch up tonight but I will tomorrow. I spent my day getting my turkey special orders done. Lifted and repriced over 300 turkeys today. It hurts to lift my arms up. cheesy

I will see you all tomorrow.

Good night, everyone.

So last year on this date we had 52 tornado's hit the central part of Indiana. This year it's freezing cold and snowing. Does that mean the snow and cold are going to be worse than last year? If the answer is yes, I'm seriously considering packing up my sleeping bag and heading to camp out on a beach in Miami!!!

I'm with you, but instead, I say we just go to Myrtle! I know it can still get cold there, but it's still the beach! Miami gets to hot!

brrrrr it has gotten very windy and light snow, going down to -19c (-2f)

Most of work done, cooking dinner now. made 3 batches of gingerbread dough. Going to have a cookie decorating party with the folks over at a housing complex.

Living room getting more boxes piled in it as the day of daughters move getting closer. Just got notice that me and my son have to move now. I really do not look forward to that. It should be next summer at least before that happens. Hope to find a place closer to work to save on gas.
It will be anew place to figure out how to decorate all over again!

Hope you had a fun evening! I'm sure you did! Stay warm!

Sorry to hear you're going to have to move. Hoping you find something you love, whenever the time comes.

LOL!!! Wanna come along?? You are going to get it worse than me!!!

Sure!!!

See Snowflake!! Holiday is coming along!!!

Good Idea!!!! My Buddy Dale Earnhardt Jr has a vacation house down in Key West. I'm sure he would let us all stay there or at least camp out in his yard. Heck, maybe he will even let us stay on his yacht!!!

Stay warm and enjoy the cookies!!! Hope the party goes well!!!

Praying you can find somewhere closer to work that's bigger, more beautiful, and cheaper!!!

I'm sure it will be fine!!! I'm on my way to test out for you though just to make sure that you don't eat any substandard bread!!!!

Good Evening, Buddy!!!! I hope you have a great night and that you can get some rest!!!! xx

If you're going to Jr.'s house, I'm in!!!

pecan-cheesecake-squares-title.jpg

For the shortbread layer

1 1/2 cups all-purpose flour

3/4 cup firmly packed light brown sugar

1/2 cup butter, softened

1/2 cup finely chopped pecans

For the cheesecake layer

2 (8-ounce) packages cream cheese, softened

1/2 cup sugar

1/2 cup milk

2 teaspoons vanilla extract

For the pecan pie layer

3/4 cup firmly packed brown sugar

1/2 cup light corn syrup

1/3 cup butter, melted and cooled slightly

3 large eggs, lightly beaten

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1 1/2 cups pecans

Instructions

Preheat oven to 350.

For the shortbread layer:

In a medium bowl, combine flour and 3/4 cup brown sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in 1/2 cup pecans. Press mixture evenly into bottom of a greased 9x13" baking pan. Bake for 10 minutes; remove from oven, and cool slightly, about 10 minutes.

For the cheesecake layer:

Place the cream cheese in the bowl of a stand mixer outfitted with a paddle attachment, and beat at medium speed until smooth. Beat in sugar. Add milk and 2 teaspoons vanilla, and beat until combined. Pour the cream cheese mixture over the cooled shortbread layer. Bake for 15 minutes; remove from oven and cool slightly, about 10 minutes.

For the pecan pie layer: In a medium bowl, combine the remaining 3/4 cup brown sugar, corn syrup, and melted butter. Gently stir in the eggs, salt, and remaining 1/2 teaspoon vanilla extract. Stir in 1 1/2 cups pecans. Pour pecan mixture over cooled cheesecake layer. Bake for 35-40 minutes, or until center is set and pecan pie layer is a rich brown color.

Notes

These would be a lovely addition to a holiday menu!

They look delicious! Thanks for sharing, Holiday! I saved them to my Pinterest!

Only if you know a good secluded beach that we can build a fire on to keep warm. I doubt they will let me do that on the tourist beaches.

I'm sure we could find something! If I would move down there, I would want to live on the beach or near it!

It would be better with Luke Bryan singing!
