This upcoming Christmas will be the last for my wife and me as a couple...as she is expecting with our first child. WE ARE BECOMING A FEW!!! (get it... bad joke). Her "due date" is February 4th. Hopefully the baby won't come on the day of the Super Bowl!!! :)

I have a few stuffed mushroom recipes that I make, I just love them.
These are two of my favorites ~

Classic Stuffed Mushrooms
Ingredients
  • 18-24 button or cremini mushrooms, scrubbed clean, stems separated from the caps
  • 1 Tbsp butter
  • 2 small shallots, minced, about 2 Tbsp
  • 1 large garlic clove, minced
  • 2 Tbsp chopped walnuts
  • Salt
  • 2 Tbsp chopped parsley
  • 1 teaspoon herbes de Provence or dried thyme
  • 2 Tbsp breadcrumbs
  • 2 Tbsp sherry or chicken stock
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan cheese
Method
1 Preheat oven to 375°F.

2 Finely chop the mushroom stems. Heat 1 tablespoon butter in a small frying pan over medium-high heat. Sauté the chopped mushroom stems and the shallots for 4-5 minutes, stirring often. Add the garlic and walnuts and sprinkle with salt. Stir well and sauté 2 more minutes. Turn off the heat and add the parsley, herbes de Provence and breadcrumbs. Pour the sherry into a food processor, then the rest of the stuffing. Pulse several times to get a fine mixture, almost a paste.

3 Toss the mushroom caps with olive oil. Fill each mushroom with the stuffing. Sprinkle grated parmesan cheese over each mushroom and bake for 20-25 minutes, or until the cheese browns a little. Allow to cool for 5 minutes or so before serving.


Sausage Stuffed Mushrooms
Ingredients
  • 24 ounces, weight White Button Mushrooms
  • 1/3 pound Hot Pork Sausage
  • 1/2 whole Medium Onion, Finely Diced
  • 4 cloves Garlic, Finely Minced
  • 1/3 cup Dry White Wine
  • 8 ounces, weight Cream Cheese
  • 1 whole Egg Yolk
  • 3/4 cups Parmesan Cheese, Grated
  • Salt And Pepper, to taste
Preparation Instructions
Wipe off or wash mushrooms in cold water. Pop out stems, reserving both parts.
Chop mushroom stems finely and set aside.
Brown and crumble sausage. Set aside on a plate to cool.
Add onions and garlic to the same skillet; cook for 2 minutes over medium low heat.
Pour in wine to deglaze pan, allow liquid to evaporate.
Add in chopped mushroom stems, stir to cook for 2 minutes. Add salt and pepper to taste. Set mixture aside on a plate to cool.
In a bowl, combine cream cheese and egg yolk. Stir together with Parmesan cheese.
Add cooled sausage and cooled mushroom stems. Stir mixture together and refrigerate for a short time to firm up.
Smear mixture into the cavity of each mushroom, creating a sizable mound over the top.
Bake at 350 degrees for 20 to 25 minutes, or until golden brown.
Allow to cool at least ten minutes before serving; the stuffed mushrooms taste better when not piping hot.

The year I moved back from Toronto, just in time for the Christmas holidays, my mom lost her mother on Boxing Day and her biological mother on New Year's Day and the Spring before that she lost her maid of honour (childhood friend) to a tornado. It was a rough year for her and I was so glad I was nearby to offer some comfort and support. We hit a few rough patches over the years and always found ways to let go of our disagreements and be friends again. Heading over there tomorrow for a visit.

And we're close. We're perilously close. To the 2/3 Christmas Day marker.
In fact we are under-half-a-week-away close.

Not a bad day at all here yesterday.
The afternoon was actually more comfortable than the morning, thanks to lower humidity readings.
Should be a real nice weekend, and it has commenced at 69 degrees under invitingly clear skies.

Good morning everyone!
Not too much going on here today. My husband had to go in to work today, the girls will all be working as well. I have lots of errands and chores to do so I'll keep myself busy with that. Hopefully we'll all meet up for dinner, I plan on grilling Angus burgers and shrimp kebabs. .I'm going to make potato salad and pick up some fresh corn on the cob at the farmers market.

Good Morning, MMC!!! It's a beautiful sunny morning here with a temp of 61 degrees right now. We should top out around 80 later this afternoon. Mom is doing pretty good. Walking with her cane now and getting some of her energy back. I never made it to the grocery yesterday so I want to head there soon and then back home to do some cleaning. First I'm going to take something for my head before it explodes. Darn allergies. I hope everyone is having a GREAT FRIDAY!!!!!

So happy to hear that your mom is improving. Baby steps and TLC will help her feel like her old self.

Hello everyone. I hope you all have a great weekend!

Blue sky, a few fluffy clouds - no problem so far! My allergies are acting up a bit due to the Goldenrod around the creek, but I'm not letting it stop me from having a good weekend. I booked Monday off so I can go to a Honeybee farm an hour away to pick up a few things for my mother and one brother for Christmas. (Honey doesn't spoil.)

My brothers and a few relatives had gathered for a Boxing Day dinner and celebration and my mom didn't tell us the sad news until well after dinner so it wouldn't spoil the festivities. What courage she had. I was pleased that I was able to visit my grandparents in Nova Scotia (on my own) the first year I was in college. It would have torn me up if I hadn't seen them before they passed. She was feisty and a good storyteller. I remember when I was little and they came to visit and I dragged them all over the neighbourhood to meet people who were my "stand in grands". We also went to Santa's Village and had such a great time. I still miss my grandparents and cherish the memories of several visits and Christmas phone calls.

Thanks, me too! Darn cars. They will probably have to order apart, and so today It'll probably be mostly diagnostic. I hope they can get it in by Monday, and fix it then too.
