This is the recipe, I usually melt some shredded mozzarella on top of the bruschetta, it's sooo good!

Baked Bruschetta Chicken Recipe

Ingredients

  • ½ cup flour
  • 3 eggs, lightly beaten
  • ¼ cup grated Parmesan cheese
  • ⅓ cup dry Italian bread crumbs
  • 5 boneless, skinless chicken breasts
  • 1 tablespoon butter, melted
  • 1½ cups tomatoes, diced
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons fresh basil leaves, finely chopped
  • 1 tablespoon balsamic vinegar
  • salt and pepper to taste
Instructions

  1. Preheat oven to 375 degrees. Spray a 9x13" baking pan with non-stick cooking spray.
  2. Mix together bread crumbs and ¼ cup Parmesan cheese and place in a bowl. Place flour and eggs in their own separate bowls.
  3. Dip the chicken breast in the flour, then in the eggs, and then in the bread crumb/cheese mixture. Place chicken breast in prepared baking pan and then repeat with the remaining chicken breasts. Pour melted butter on top of the chicken. Bake for 30 minutes or until the insides or no longer pink and registers at 165 degrees.
  4. While the chicken bakes, mix the tomatoes, garlic, oil, cheese, basil, balsamic vinegar, and salt and pepper. Let it sit for about 15 minutes so that the flavors can meld together. When chicken is finished cooking, spoon some of the fresh tomato mixture on each chicken breast and serve.
Sounds amazing! Thanks for sharing!!!

Delicious!!!!!! I will make this soon!

Oh yea, I know how that feels, thinking about you my friend...Fight the good fight~
Thanks! I KNOW you know. For long hours, you've definitely got me beat.
Got home about 8:15 last night. Today's Day 10. Hoping that tomorrow, Day 11, will be the last consecutive workday without a day off. Only two of those consecutive workdays have been less than 9 hours ... Come on, Friday! How I wish TODAY were Friday Eve!

You are almost at the end of the week and closer to that day off! Hang in there Merry. You are doing a great job and the end of your project will make you feel a great sense of accomplishment after all you have had to put into it!!
Thank you!
No doubt it will be just as busy when I return after a long weekend, but at least I'll have had some leisure and recreation before I go back!

These cats make me feel like I have little kids in the house!

Yes, they all look innocent. Sophia just stole a roll of toilet paper out of the closet and is tearing it up right now. It never ends.
Ah ha!! I love it! Sounds like a day in the life with Gracie!!! :D

Thank you! I just printed it off! I love chicken & I love bruschetta...and I have fresh tomatoes. Mmmmm!

Festive, was it you who just had to get a new furnace boiler?
Just had our annual furnace tune-up this morning. The boiler is doing fine, but we need a new hot water heating system. Soon, as in the next couple of weeks. Made me think of your "surprise"! But it will be a more efficient system that will reduce costs in the long run.

So beautiful, love the colors!
Enjoy Holiday!

Thank you!! My friend made an afghan in those colors & I thought it looked so nice in our sunroom I almost didn't let her leave our house with it. Ha ha! So I had mom make me one in those colors, but different pattern!
