Happy Headless Horseman! Today folks we move along and see that we have 49 days remaining until Thanksgiving and 14 days to go until November. We move along in our Awesome Autumn with our next milestones set to arrive on Thursday. It will be when Tom Turkey Day #11 and the Home Stretch till November both arrive. It’s Sunday folks so time for the 2nd half of our Quiet Weekend Period. And it is never quite quiet for The Sunday Group, but you can read about that in the thread I recently started and named after them to tell of your Sunday plans. It should be a fun time though without getting too detailed. We are going to our 4th annual “Headless Horseman” event and out to eat right before it like we do every year. The weather here feels more like Halloween to more like Thanksgiving type of weather. Chilly for this time of year but we always get some chilly shots in autumn (even the 1st half of it). The best to all of you my turkey friends. You know how I always talk about that long 10-week road from the week after Labor Day through the week before Thanksgiving? Well today is halftime. We complete the 1st half with 5 weeks of it down and 5 big weeks of it to go. Heading deeper into autumn is exciting. Have a great Headless Horseman!

I am still waiting for the Thanksgiving display at the store...sadly no sign of it yet. I cant wait until I see it..I pick up these little green boxes of turkey/stuffing seasoning. I use it all year for chicken and in the coating for porkchops.

Happy Excellent October! Today folks we move along and see that we have 38 days remaining until Thanksgiving and 13 days left until November. We move along in our Awesome Autumn with our next milestones set to arrive on Thursday. It will be our final Tom Turkey Day before Thanksgiving believe it or not. It will also be the Home Stretch till November believe it or not. Amazing doubleheader. It’s Monday folks so time for our weekly feature known as YouTube Day below!

This one will really put you into the spirit of Thanksgiving despite it being a short clip. A very nice one here to start the week. I hope you all had a good weekend and are ready to move along to a new week as I mentioned. It is Monday. And I’m ready for a new week. We had a lot of fun Sunday, and you can read about it in the Hang Out tomorrow on Tuesday if you are interested. Our 4th annual “Headless Horseman” event was great. It’s a long ride but it’s more than worth it. Just one of the best things we do all year long. The best to you my gobblers on this Monday. Enjoy it and make the most of today. Happy Monday! Gobble Gobble. Yesterday felt like it could be Thanksgiving weather. Or even Easter. There are some rare times in the year when the weather can be mirror images of each other. I had strong April / October feelings yesterday.

So far I’ve practiced smoking two turkeys. The first one was small and turned out alright, but the breast was pretty dry. The second turkey was larger, so I spatchcocked it and injected it with Cajun butter and somehow still managed to dry it out. I figure I’ve got maybe only one more practice session before Thanksgiving, so for the next one I’d better nail the formula down.

You should maybe think about brining it, too. It always helps mine.

I have found that large turkey do not smoke well. You may want to do a couple of 10lbs to 15lbs. I have done quite a few and each one is a learning opportunity. A simple cup of salt and a cup of brown sugar brine will keep it moist. Last year I took two birds apart, breasts wings thigh and drumsticks. This allows more control of the light and dark meat temps and also gets more smoke and seasoning on the meat not to mention, a faster cook.

I did an overnight dry brine on the first one, and no brine whatsoever on the second. I’ll have to try a normal wet brine next time.

This also sounds like a good plan. I never thought about going with two smaller turkeys, but that’s actually ideal.

Happy Old School October! Today folks we move along and see that we have 37 days remaining until Thanksgiving and 12 days left until November. We move along in our Awesome Autumn with our next milestone set to arrive on Thursday. Did I say milestone? Singular? I should have said milestones (plural). Because we have 2 of them coming the day after tomorrow. The 1st will be Tom Turkey Day #1. The 2nd will be the Home Stretch till November. Both will happen on Thursday. That should be fun. It’s Tuesday folks so time for our Picture Day. You know it is that time of the week when we post pictures of Autumn and Thanksgiving. This is always a fun thing we do every single week. It makes Tuesdays a little more special than they otherwise would be. The best to you my turkey friends on the 2nd day of this week in October. Just a great month overall and difficult to beat. I hope you all enjoy your day, my friends. Maybe have a slice of apple pie. My mom made another one and it is the best. I saved a piece for myself this morning. Yum. I can’t wait.
