We are going to brine a turkey breast, corn, peas, stuffing, and mashed sweet potatoes. Also, nice lovely buttered rolls. Love them.
 
Thanksgiving is my hubby's favorite holiday, so I try to make it special for him. I always watch the Macy's Thanksgiving Day parade while I cook - my favorite part of the day. Our menu tends to stay the same (pretty much) each year. One benefit to this is that the meal prep becomes like clockwork. I'm all about making anything as simple as possible. We will have:

Turkey
Mashed potatoes and gravy
Glazed sweet potatoes
Green bean casserole
Stuffing
Cole slaw
Deviled eggs
Hot Rolls

Pecan pie
Pumpkin pie
Cherry Pie
 
This will be my hubby and my first year making Thanksgiving for our family... I have to admit i'm a little nervous! We have a TINY oven so i'm hoping a turkey will even fit.. we might do cornish hens or a chicken instead i'm not sure honestly lol. I'm also worried about making too many or two few sides. Do you ask your family to each bring something or do you make it all? Any tips for a first timer?

Our families Thanksgiving is large, (50+) so yes, everyone brings something! We always have a plain ol turkey & smoked turkey + all the fixings!! (aka - food EVERYWHERE!!!) I hope it goes very well for you!!
 
Our Thanksgiving dinner is pretty much the same each year.
Roasted Turkey & gravy
Homemade stuffing
Candied yams
mashed potatoes
greenbean casserole
broccoli
corn
homemade cranberry sauce
canned cranberry sauce
rolls
turnips (for my mother and aunt)

Dessert:
Homemade Apple Crumb pie and Pumpkin Pie
 
We usually host about 20-25 people.

On the menu we have:

Appetizers:
cheese/cracker plate
a few diff types of chips/dips

Main Meal:
28lb turkey
Spiral ham
mashed potatoes
green bean casserole
baked carrots
collard greens...my BIL makes them soo good!
macaroni and cheese
rolls

Dessert
Apple pie
Brownies with cream cheese mixed in
cheesecake with strawberries on top

Could you post your baked carrot recipe? I am looking for another vegetable dish that doesn't have to be cooked on the stove or in the microwave. I try and make as much ahead of time as possible. I hate trying to prep at the last minute when I have company.

- And maybe I'll try the Scalloped Corn

- Queen Maud´s pudding
- Chocolate pudding with vanilla sauce
- Vanilla ice-cream (maybe)
