Did you see the story of the guy who in (I think it was 1994) when he graduated high school wrote in his year book that the Cubs would win the World Series in 2016? I'm sure they are going to want to interview him.

Yes. There was also a tweet going around last night where someone predicted two years ago that the Cubs and Indians would play in this world series and take it to extra innings in game 7. Then the world would end.

Thankfully the last part hasn't happened yet.
 
A very good morning to all the MMC members. Second day down at work. Management getting nervous like always as the back store rooms fill up to overflowing. Glad that is one headache I no longer have. Went down to the DMV to get new registrations for both cars and it seemed like Christmas early... no one in line! ;)
Then stopped at the police station to drop off some cars keys that I found by the house. I'm thinking they were dropped at Halloween. I feel sorry for the people that lost them. I hope they had a spare set with them. Not much else going on, so it is time for some Bible study and then off to bed so I can get up for a portion of tonight's game.

Whoever hosts for my family has to host for almost 50 people IF everyone can make it, which normally doesn't happen. But it's usually between 30 & 40 peeps - Soooo... nobody is jumping to offer. Imagine that! :p

How are you all doing?

This morning I got the news that my son's (who's almost 1 & a half) will have his surgery done just a couple of days before Christmas (on the 23), which means we will be spending Christmas and the holidays in hospital. The surgery was supposed to have been done before so I had been hoping it would all be over by Christmas and I had made all sorts of plans...now everything's changed and I have to change everything. I had even been planning to host a party for my husband's family on the 23rd. Anyway, I just hope the surgery will go well and be successful and there will be no complications and that he won't be in too much pain.

On a more positive note, since we won't be home for Christmas, we'll decorate the house earlier and in hospital hopefully the atmosphere will be merrier than usual. They even give out Christmas gifts to the kids so hopefully the experience won't be as bad for my son.


Praying your son's surgery goes well and for a smooth recovery.

It sounds Like you have some good plans already for making the most of the situation.

Bacon Wrapped Smoked Turkey Tenderloins

Today I am introducing to you the bacon wrapped smoked turkey tenderloin which is lean, smokes beautifully and is a great cut for the holidays or any day.
Author: Jeff Phillips
Recipe type: Entree
Cuisine: Hot Smoking
Serves: 6
Ingredients
  • 2 turkey tenderloins
  • 1 lb bacon or about 12 slices
  • ½ cup Jeff's original rub (I just use my favorite rub)
  • Turkey brine recipe (below)

Instructions
  1. To a medium pot add 1 quart of water, 1 TBS of course ground black pepper, 1 TBS of red pepper flakes, 2 long sprigs of thyme, 2 long sprigs of rosemary and 8-10 garlic cloves smashed with the side of a knife.
  2. Bring to a boil then remove it from the heat and let it steep covered for 20-30 minutes.
  3. Place the mixture in the fridge for several hours to cool.
  4. To make the brine, add 3 quarts of cold water to a gallon sized pitcher and 1 cup of kosher salt.
  5. Stir the mixture until the salt is dissolved.
  6. Add the cooled mixture from the fridge into the brine and stir to combine.
  7. Place the turkey tenderloins into a plastic bowl or zip top bag and pour the brine over them to cover.
  8. Place the container with the brining turkey into the fridge for at least 4 hours or overnight.
  9. When the brining is complete, rinse the turkey under cold water to remove any residual salt and discard the brine.
  10. Season the turkey with Jeff's original rub then wrap the entire tenderloin with bacon. This will take approximately 4-6 pieces of bacon.
  11. Season the outside of the bacon wrap with Jeff's original rub then place the wrapped tenderloins onto a Weber grill pan, Bradley rack or cooling rack and it is ready for the smoker.
  12. Setup your smoker for cooking at about 240°F using indirect heat and cherry wood for smoke.
  13. When the smoker is ready, place the meat into the smoker and close the lid or door.
  14. Let the turkey smoke cook until it has reached 165°F in the thickest part.
  15. Remove the turkey from the heat and allow it to rest under a loose piece of foil for about 10 minutes.
  16. Slice and serve.

Happy Thursday!
It's going to be partly cloudy with temperatures in the lower 70's. My house was a bit too warm yesterday, I had to run the air conditioner. I'm sure I'll have to do the same today, hopefully it will cool off soon. Anyway, we have a couple of appointments today. My oldest is scheduled for a routine dentist appointment, I'll probably take a ride with her and keep her company. I scheduled cleanings & X-rays for the whole family this month. Might as well get them out of the way before Christmas. Maggie also has to go back to the veterinarian later to have blood drawn again, the poor thing. Other than that I will be working on my daily chores. I put all of my Halloween decorations away and switched to all Thanksgiving. I'm really excited about hosting the holiday, can't wait. My daughter decorated a pumpkin for me last night, she drew freehand. It came out cute. I put it next my little Autumn tree, I thought I would share a picture ~
