This is the recipe, I usually melt some shredded mozzarella on top of the bruschetta, it's sooo good!


Baked Bruschetta Chicken Recipe

Ingredients

  • ½ cup flour
  • 3 eggs, lightly beaten
  • ¼ cup grated Parmesan cheese
  • ⅓ cup dry Italian bread crumbs
  • 5 boneless, skinless chicken breasts
  • 1 tablespoon butter, melted
  • 1½ cups tomatoes, diced
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons fresh basil leaves, finely chopped
  • 1 tablespoon balsamic vinegar
  • salt and pepper to taste
Instructions

  1. Preheat oven to 375 degrees. Spray a 9x13" baking pan with non-stick cooking spray.
  2. Mix together bread crumbs and ¼ cup Parmesan cheese and place in a bowl. Place flour and eggs in their own separate bowls.
  3. Dip the chicken breast in the flour, then in the eggs, and then in the bread crumb/cheese mixture. Place chicken breast in prepared baking pan and then repeat with the remaining chicken breasts. Pour melted butter on top of the chicken. Bake for 30 minutes or until the insides or no longer pink and registers at 165 degrees.
  4. While the chicken bakes, mix the tomatoes, garlic, oil, cheese, basil, balsamic vinegar, and salt and pepper. Let it sit for about 15 minutes so that the flavors can meld together. When chicken is finished cooking, spoon some of the fresh tomato mixture on each chicken breast and serve.
 
SO true ! There is always something. It always seems to around this time of year as well and everything seems to happen at once. My gutters need repairing after all the rain we have been having! Plus my kettle and toaster both broke!! Ah well ...you just have to laugh it off right!

My friend, I think that's is all we can do - laugh it off! Doesn't do any good to get upset! As they say "when it rains, it pours" :cool:

 
We've been getting cool nights and 70F high temps, and we're expecting a high of 65 on Friday, so we're starting to feel like fall here. They tell us that because of the dry spring and summer here that the foliage may not be very vivid this year. In fact, they say that some trees are rushing to go dormant for the winter because of the lack of water---just shedding their leaves before they change color. I'm sure we'll get SOME color anyway.

Well I hope you do get some nice foliage! It's hard to tell what we will have here. We had SO MUCH rain to start but have been dry for awhile. Although we had 1 1/2" of rain on Saturday. Hopefully it will be a beautiful foliage year for all of us! xx Your temps are much cooler than ours. We still have 80's next week a day or two - our next 15 days we have a high of:
80, 82, 81, 78, 78, 81, 81, 77, 77, 75, 75, 75, 74, 72, & on Oct. 7th - 70º
 
Seems there is always something, doesn't it!! We just got a new hot water heater a few months ago! Hope it's not too expensive for you!

It won't be cheap, of course, but the new system they told us about will save on fuel oil, so it should help to pay for itself over time. And when the time comes to get a new boiler, this new system will be compatible with it. So I don't feel too bad about the expense. I'd rather pay for a new water heating system BEFORE the old tank leaks and causes a flood.

The sc ripples done in the back loops to give that ribbed effect are VERY cozy, because the "ribbing" helps to trap warm air. It can be tedious to do one in sc like that. My mom usually made her ripple afghans in double crochet, which works up faster but still looks nice.
Yep, I wish I had the patience!! I do like dc ripples too - I have done several of those! The do work up much faster!

Absolutely!!! Good way to think about it ~ proactive!!
 
Yes it was me! Our thermostat wasn't working properly so I expected a couple hundred pounds tops for a replacement part. HOWEVER they found a couple other things and the fact that it is old meant that it wasn't worth repairing. Like you mention though, this new one will A LOT more efficient and will lower the bills largely! The shock of the expense though!!! Wasn't expecting it!!

Hope yours is a smooth enough fix. It will definitely be worth it though!

So the happy thing is that the newer water heating system will help to offset the old boiler's lower efficiency. We knew the tank was on its last legs, but we didn't know its life expectancy was mere weeks! I'm glad our furnace tune-up was today, so we can jump onto getting a new one.

I hope I am not just being duped into buying our new system. It is working fine except that we can;t adjust from high to low so it is constantly on high which is not comfortable. So it feels like a huge leap for us but figured it's better to invest in the new as there is always a chance that something else goes wrong with this one with it being old. At least this is the advice our guy gave us. Ah well.

Maybe your furnace guy has some way of adjusting the high setting so it isn't so strong? It doesn't seem right that your shiny new system can't be adjusted and is uncomfortable.

Hello everyone. I was off work today and took my daughter to see Disney on Ice. It was Frozen this year, and I had never seen so many little girls in either Frozen princess dresses or, as in the case of my daughter and countless others, Frozen t-shirts. I had also never heard that many little girls sing "Let It Go" at the top of their lungs and in unison. :) The children all went crazy when Olaf the Snowman finally made his appearance; you would have thought Elvis walked out on that stage!
But it was so good to spend the day with her! I kept her out of school for it. My son had the chance but told me he'd rather be at school than at Frozen any day of the week! :)

That sounds so fun!! I am sure your daughter loved it! LOL...I can imagine all the screaming girls when Olaf came on the ice!!
