I have managed to do a quick read through of all the posts since I was last here.

It has been a busy day, my son had to have a throat scope this morning to check on what was going on with his hiatus hernia. We almost missed it because for the first time in ages I actually slept in! But we made it. Everything went well and it looked good the doc said. Just have to wait for the biopsy to come back.

Now I am home from my TOPS meeting and enjoying a quiet evening at home.

I hope everything turns out fine for your son!!!
 
I love soups and chowders, too. I would love this recipe!

Here you go! I had a bowl tonight, adding a "few" dashes of Cholula, hot sauce. Mmmm! It might need a little seasoning salt too...


I made this in the crock pot, – low for 8-9 hours - adding the corn for the last couple hours of cooking time & the half & half about an hour before serving time.

Corn ‘n’ Spicy Pepper Chowder
6 ears fresh corn(milk)
1 small onion chopped
1 small green pepper, chopped
1 celery rib, chopped
1 jalapeno pepper, seeded & chopped
1 Tbsp. Veg oil
3 medium tomatoes, peeled & chopped
2 medium potatoes, peeled & chopped
1 bay leaf
1 tsp. salt
¼ tsp. pepper
¼ tsp. sugar
1/8 tsp. ground allspice
2 cups half-and-half cream ( I doubled the batch & used 2 C. regular, 2 C Fat Free)
Chopped fresh parsley, optional
Additional pepper, optional
6 bacon strips, cooked & crumbled, optional (I used packaged crumbled bacon bits –jalapeno flavored)
*I added 2 (4 oz.) chicken breasts raw & let them cook all day

Cut corn off cob (you’ll need about 3 ½ cups for this recipe) Rub the edge of a knife over each cob to milk it; add enough milk to cob juice to equal 1 cup. Set corn & liquid aside.
In a large saucepan, sauté the onion, green pepper, celery & jalapeno in oil until soft. Add next 7 ingredients; bring to a boil.
Reduce heat; add cream, & reserved corn & milk mixture. Simmer for 30-40 minutes. Discard bay leaf. Garnish with parsley, pepper & bacon if desired. Yield: 6-8 servings (2 quarts).
 
WOW! It took me all day & until 10:15 tonight to get caught up! Geesh!!! :lol:

I hope you all had a great day. I still haven't decided if I"m taking off work tomorrow. A day off sounds awesome but the weather is supposed to be - not good. It would be nice to have a nice (weather) day off. I guess I'll decide in the morning. I could always burn Christmas candles & watch movies all day. :) (ya, right!)

I have not slept well for about four nights in a row...so we'll see how tonight turns out. Why is it that I can never fall asleep easily/get cozy during the night, but in the morning I am so comfortable and I can't drag myself out of bed?! My body is STILL not used to waking up early for my classes. During the summer, I slept in about two hours later than I do now...guess it'll take some more getting used to.

I hate that it is getting darker earlier!! That is one thing I liked about the summer - I could take my walks in the evening and not have to worry about it getting dark on me by 7:30 PM!

I am the same way Jennifer. I can NEVER sleep at night but when I am supposed to be up and working I could doze off while typing !! I hope you get to rest !......How is the doggie ???

Yup, that's what we are going to do as well. We're going to start looking for a new tree next weekend. Hopefully there will be some places that have them already setup so we can really get a chance to see how they look, instead of trying to guess how they look while their still in the box!

We had our old tree now for about 12 years, and last year, I could really start to tell by all the fake needles on the floor that it was starting to get wore out....:sparkle:
 
I didn't get home from work until after 9:00 tonight but after I got settled in with a hot "cuppa" of tea.... and a little nighttime snack of peanut butter on Ritz cracker; (Remember Andy's saying; "Everything taste great when it sits on a Ritz, mmmmm, good cracker"). lol....

So, everyone was in bed by then, so I turned on the tube and behold, Home Alone was on! Yes, a perfect way to end the night...
