What kind of turkey are you wanting to learn how to make? Turkey really isn't that difficult, you just need to figure out what kind of taste you're looking for. Most people in my family like the slightly sweet turkey but the way I usually make it it's a little bit spicy and really juicy.
 
It's fun to see how everyone fixes their turkeys, Sheep is into deep frying them which I hear is wonderful
 
deep fried turkey??? I've never heard of that but I think I would have a heart attack if I ate it...lol.
 
I haven't had fried yet, either, even though my friend around the corner promises me some every year. :-?

Anyone else brine their birds? It has consistently yielded the most flavorful and juicy turkeys for me.
 
I've never done the brine thing, is this for an extended period of time?
 
You let it soak overnight the night before you cook it. It works on the principles of osmosis drawing blood out and replacing the void in the cells with water and whatever is permeated within it. It really beats basting in every way.
 
You guys really should give it a try. I hate to sound like a broken record, but Alton Brown's Thanksgiving episode "Romancing the Bird" is excellent for explaining the whats, hows, and whys of the brine. A lot of other good tips in there, too. If you have the Food Network, it's sure to be on soon. If not, Target sells sets of Good Eats. The one entitled "Meats, Sweets, and Holiday Treats" has Romancing the Bird on it.
 
maybe we should ask him if he can share the appropriate way to romance a bird. :grin:
