Yes I do. I asked Holly for it just this morning, she has been meaning to transcribe it onto an actual piece of paper to put in our recipe book. We always share recipes when someone asks for it, Holly has built quite a cookbook over the years and it is all a labor of love. I will post it on here so that all can enjoy if they wish to try. 4 qts of water to 1 cup of sea salt
I boil 1 quart of water and salt till dissolved..let cool. Put turkey in container and submerge with the 3 quarts of ice water and salt water. I add some orange and lemon peels, sage leaves and marjoram and a handful of juniper berries if you can get them. Brine minimum of 12 hrs to 24 hrs.

Happy Mid-November! Today folks we have 9 days remaining until Thanksgiving. I know. Trust me. I know. Single digits until Thanksgiving? And no more milestones between us and THANKSGIVING. That is our next and FINAL milestone and ultimate destination. Geez. I’m telling you I can’t believe we’re this close now but we are. Those triple digits are so long ago gone and the double digits now have ended. What’s next? Well we better stay in this current week so we don’t find out too soon too fast. I hope everyone is getting ready for the big week next week by planning and preparing this week. It’s all going to unfold right before our eyes before we know it and we must be as prepared as possible. We move along here in our Awesome Autumn feeling awesome ourselves about the amazing spot we’re in right now with Thanksgiving being next week. It feels unreal to believe that we’re almost there. But I’m glad we are here where we are and thankful all of you are here with me. Thank you all for being here this year. And I mean year as in last year on Thanksgiving night when I started this thread all the way up until now where we are 9 days away from being there again. Now for all you turkey fans have a great day today will you? And don’t get too nervous yet about next week. We still have time. Have a great Mid-November!​

I wish it were October again.....without hurricanes.

My SIL went to the ER yesterday. She is 80 and has congestive heart failure. She is in denial. She had gone to visit my brother in the VA nursing home when she started feeling funny. She drove herself to the hospital. Thankfully, she got there in one piece and didn't cause an accident. Their daughter is in the air right now and will be with her Mom by 5pm.

I have to visit my brother at dinner time. My SIL is convinced he can no longer eat by himself and nobody feeds him. She goes for lunch every day and makes sure he eats.

There seems to be sickness all around me. My best friend, who is also my housemate, has been down with the flu or something similar for over two weeks. It's not Covid. We both tested negative three times and I've felt fine....except for that pesky ALS that keeps me from doing the things I need to do.

On a better note, I have everything in the freezer or refrigerator for Thanksgiving. Now that my niece will also be here, I'm relieved. She is a great cook, excellent speed in the kitchen and has no health issues. She'll be 60 this coming year and has never had to take any medicine for anything. With each of her four children, she gained exactly 25 pounds and it was gone within a month after delivery. Can you tell I'm a proud aunt? We are only 7 years apart so we grew up together. My brother is 19 years older than me....same parents.

I just need to remember to take the turkey and tenderloin roast out in time and make the lobster mac & cheese next Wednesday. Everything else will fall into place.

I hope my SIL and housemate are both well and the housemate is better so we can have visitors.

I always wear an N95 mask when I visit my brother. I've only had a few colds in my life so I may go around asymptomatic for all I know. I've never had the flu. I just want to protect people around me in case I'm carrying something. I also always do a quick Covid test before I go or before people come over.

The ER doctor said my SIL probably has long haul Covid. She was sick for over a month back in August and, the doctor thinks, she never fully recovered. They want her to get another booster ASAP.

So, the countdown continues with or without us.

I had an awful cold a few weeks ago. I tested 4x- 2 home and 2 PCRs and they were all negative. Def some crazy virus going around.

Happy 2nd Half Of November! Today folks we have 8 days remaining until Thanksgiving. Our next milestone is in a week and a day from now. Uh it’s not just the NEXT milestone it’s the FINAL MILESTONE and the ULTIMATE GOAL which is Thanksgiving. I know. It’s really coming folks. But luckily we have a week + to continue. As we continue through our Awesome Autumn I have an interesting poll for you, as always on this Wednesday!

If you could create a 2nd Thanksgiving celebration in May (having 2 a year instead of 1) would you do it or leave it as is and keep only 1 in November?
  • Yes, of course!
  • No, it wouldn’t feel the same having it in May and dilutes the specialness of it being once a year!
  • I wish I could have more than 2 Thanksgiving a year!
  • Yes, but I would want it to be a “Mini Thanksgiving” not a full replica of the real Thanksgiving!
  • My first instinct was to pick B even though you’d think I’d pick any answer with YES in it. But I really do feel part of it being special is the time of year it is and how it’s only once a year. I’ll stick with that but I’m not opposed to D also. If we did a replica of it but not fully (i.e. no football, maybe not a full dinner but half dinner). Just my feeling on it. What about you? Have a great 2nd Half Of November!​
 
Good Morning Folks! Here is how Holly brines the turkey, if anyone wants to try it:

In 1 1/2 gallons of water, add:
1 1/2 cup of Kosher Salt
3/4 cup of Sugar
2 cups liquid smoke


Make sure the turkey sits at least 24 hours in the brine!

Here is the Cheater No-Salt Dry Rub:
1/4 cup paprika
1/4 cup black pepper
2 tbls garlic powder
2 tbls onion powder

And when it's time to put on the turkey and bake in the oven:

2 - 3 tbls Cheater Dry Rub
Dried Oregano
Dried Sage
Marjoram
Thyme
3 celery stalks chopped
1 onion (in wedges)
1 stick of butter
2 tbls All Purpose Flower


And then you just bake as appropriate for the weight of the turkey! You can still stuff it with whatever you like. Sometimes we have even stuffed Apples in there for flavor, you get sort of a smoky / sweet taste!

We did a "Halfway to Thanksgiving" in May, and it was awesome. It was not a full scale recreation of Thanksgiving, but it was pretty close. And I loved it. So I pick D, because the knowledge of knowing that it's not Thanksgiving, but it's to honor Thanksgiving. Just like we do with Rudolph Day, and Jack O Lantern Days, those little special days don't take the luster off the actual big day!
