Tonight William is sleeping over at the grandparents. Ash and I have an evening alone. This is our 2nd evening without William since he was born. Holy moly. Well off I go! Im going to try my best and be around more! I really miss all of you and miss being involved in everything!

Good to see you! Have a great time out with Ash!!!

Good afternoon, MMC!

I hope this finds everyone well! Have a MERRY day!!!

Absolutely - this was on Facebook, but I tweaked it a little bit. This is how I made it, & I wouldn't change a thing!:

Mexican Stuffed Shells
1/2 pound ground beef (or ground turkey)
1 package low-sodium taco seasoning
8 ounces cream cheese
20 jumbo pasta shells
1 1/2 cups corn & black bean salsa
1 cup taco sauce
1 cup cheddar cheese
1 cup Monterrey jack cheese
For toppings:
3 green onions
Sour cream

Preheat oven to 350°.
In a pan brown the ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Stir together and mix well. Set aside and cool completely.
While ground beef is cooking, cook the pasta shells according to package directions; drain. Set shells out individually on cutting board or baking sheet so that they don’t stick together.
Pour corn black bean salsa on bottom of a 9×13 baking dish. Stuff each shell with 1-2 tablespoons of the meat mixture. Place shells in 9×13 pan open side up. Evenly cover shells with taco sauce. Cover dish with foil and bake for 30 minutes.
After 30 minutes, add shredded cheese and bake for 10-15 more minutes with the foil removed. Top with green onions or olives if desired. Serve with sour cream and/or more salsa!
Serves 20 shells

If you try, I hope you enjoy! We thought they were pretty darn tasty even though my hubby was surprised - he was thinking Italian, but there was a kick! Ha ha!

Awesome, thanks Holiday!

Good morning MMC!!! Happy Saturday! I love Saturday! :-D
I thought I was going to have more time to catch up, but the morning is slipping away! I need to finish getting ready to go out with the lake neighbor ladies! Our candle lady messaged me last night & said our candles are ready too, so I'm going to stop & pick them up on my way. Some of them are for the lake neighbors so that worked out well. Other than that I have been hanging out with the poochies this morning....and snacking on the leftover no bake cookies from last night. Ugh! Can't keep my fingers out of them! Hubby took off early for a hair cut apt & haven't seen him since, so I assume he's at the farm. He is taking Gracie out loafing this afternoon. She should be a very social dog! Ha ha ha!! Buster had been enjoying the warmer temps today - he spent some time outside & is now napping! They are both napping! Geesh!
Weathermen are saying 5-7" of snow for us, 1/10" of ice & some sleet. I guess we'll find out! It's not supposed to start until later tonight.
Wishing you all a marvelous Saturday!!!!

Enjoy your day, stay safe in the snow!

Out here, AccuWeather is saying 1 to 3 inches; the meteorologist on Boston.com (who has called them pretty accurately this season) is saying 2 to 5, but is also saying he'll know more when he sees the models later today. I'm happy for us, but I feel bad for PA, NY, and NJ. They'll be getting what we thought we were going to get.

I'm happy for you too MerryCarey. The latest for us is 4-8 inches, possibly more. I'm hoping they'll be able to fine tune our forecast by this evening.

Good evening everyone! I must say that Scottish weather was reasonable today. Although it was partly cloudy and slightly windy, we had sunshine most of the day. Nice way to start spring. :] I managed to note down some ideas for my speech but it seems that I am asked to share my personal experience of living and studying abroad so I guess as soon as I will make my talk fluent, it should be fine.
Went for a long walk to clear my mind and stopped by the coffee shop to get some yummy latte. That was my weekly treat. ^^
I feel kinda bloated today probably because I ate more fruits and vegetables than usually (spring always puts me in the mood of eating more clean) so I am probably going to take a glass of water and read a book.
I hope everyone is enjoying the weekend. Best wishes!

P.S. I've been obsessed with listening spa/relaxation/meditation music in evenings lately. It really calms the mind and prepares for deep night's sleep. :]

While we were out today we stopped at several thrift stores ( of course we did! )
At one I found this figurine. It took my breath away and made me cry. I don't know if I ever shared this before but my first son was still born 31 years ago. His name was Timmy. This just made me think of that precious little boy who is now safe in the hands of Jesus .
