Im still here not to worry! We all get busy with personal stuff and thats what I was doing. Nothing bad, just busy with family. I'm back with my Christmas family here! Just popping by to say hi! Tonight William is sleeping over at the grandparents. Ash and I have an evening alone. This is our 2nd evening without William since he was born. Holy moly. Well off I go! Im going to try my best and be around more! I really miss all of you and miss being involved in everything!

Absolutely - this was on Facebook, but I tweaked it a little bit. This is how I made it, & I wouldn't change a thing!: :smile:
Mexican Stuffed Shells
1/2 pound ground beef (or ground turkey)
1 package low-sodium taco seasoning
8 ounces cream cheese
20 jumbo pasta shells
1 1/2 cups corn & black bean salsa
1 cup taco sauce
1 cup cheddar cheese
1 cup Monterrey jack cheese
For toppings:
3 green onions
Sour cream
Preheat oven to 350°.
In a pan brown the ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Stir together and mix well. Set aside and cool completely.
While ground beef is cooking, cook the pasta shells according to package directions; drain. Set shells out individually on cutting board or baking sheet so that they don’t stick together.
Pour corn black bean salsa on bottom of a 9×13 baking dish. Stuff each shell with 1-2 tablespoons of the meat mixture. Place shells in 9×13 pan open side up. Evenly cover shells with taco sauce. Cover dish with foil and bake for 30 minutes.
After 30 minutes, add shredded cheese and bake for 10-15 more minutes with the foil removed. Top with green onions or olives if desired. Serve with sour cream and/or more salsa!

Good morning MMC!!! Happy Saturday! I love Saturday! :-D
I thought I was going to have more time to catch up, but the morning is slipping away! I need to finish getting ready to go out with the lake neighbor ladies! Our candle lady messaged me last night & said our candles are ready too, so I'm going to stop & pick them up on my way. Some of them are for the lake neighbors so that worked out well. :smile: Other than that I have been hanging out with the poochies this morning....and snacking on the leftover no bake cookies from last night. Ugh! Can't keep my fingers out of them! Hubby took off early for a hair cut apt & haven't seen him since, so I assume he's at the farm. He is taking Gracie out loafing this afternoon. She should be a very social dog! Ha ha ha!! Buster had been enjoying the warmer temps today - he spent some time outside & is now napping! They are both napping! Geesh!
Weathermen are saying 5-7" of snow for us, 1/10" of ice & some sleet. I guess we'll find out! It's not supposed to start until later tonight.

Out here, AccuWeather is saying 1 to 3 inches; the meteorologist on Boston.com (who has called them pretty accurately this season) is saying 2 to 5, but is also saying he'll know more when he sees the models later today. I'm happy for us, but I feel bad for PA, NY, and NJ. They'll be getting what we thought we were going to get.
